I pick apples from a local orchard each year. This year my husband and I picked 47 pounds of apples. That was the EASY part. Then comes the hard part…peeling and storing all those sliced apples in my freezer for my Fall baking.

A few years ago I stumbled upon an “old-fashioned” way to keep the sliced apples from turning dark by using a method utilized in the “olden days”. This intrigued me, because I am constantly buying lemons (and they can be expensive) to use the juice to prevent discoloration of apples, once sliced.

Turns out the simple solution is…are you ready for it?  SALT and WATER. Yep…that’s right! I guess it makes perfect sense. After all, salt IS a preservative, and now that I think about it, I’ve never heard of any pioneer women just reaching out and grabbing a lemon off their tree before making a pie.

Hmmm… there just might be something to this!  So I tried it… and it works! I’ve prepared my sliced apples for storage this exact way for a couple years now and it works like a charm! I recommend it.

You simply place 1/2 cup of iodized salt in a large mixing bowl.

Add about 5 cups water; mix until combined. As you peel and slice the apples, just toss the apple slices into the salty water.

Mix the apple slices in the salty water and let them soak for a couple minutes. I slice 5-6 apples at a time in each batch.

Remove the slices; rinse and drain them under cool water in a colander or mesh strainer. Dry the slices off a bit, and pack ’em up in freezer bags. Seal them well, and they will last for quite a long time… I recently pulled some apple slices out of my freezer from last September and they were STILL just as white as the day I sliced them.

What a budget stretcher! Buy apples when they are on sale, and freeze some for a rainy day’s baking! Hope you’ll try this tip. It really works, and will save you some of your hard earned cash!

Apple Pie Stuffed Won Tons

I love apple pie…I mean, really…who doesn’t? If you love apple pie, then I’m confident you will LOVE these Apple Pie Stuffed WonTons! All the yumminess of apple pie, in a bite-sized crispy treat!Won tons stuffed with apple pie filling, fried until crispy, then served with ice cream and caramel sauce is a fantastic family dessert!

Late last summer I went apple-picking for the very first time. I had apples coming out my ears after doing so, but was ecstatic to fill my freezer with apples, to make dehydrated apple chips (yum), bake pies for friends, and experiment a little with some recipe ideas. These apple pie stuffed won tons were another fun experiment!

This recipe is one of the ideas I had, using some of the amazing apples I picked, (which were Gravenstein apples, by the way). I’d never even heard of or tried Gravenstein apples before, but… I’m not kidding, they were the best baking apples ever! (similar to a Granny Smith).

I can hardly wait to go again this year and pick a bunch more! Counting the days until the farm opens for apple-picking!

I’ve used them to make a Dutch Crumb Apple Pie, an Apple Shortbread TartApple Butter, Apple Crumb Muffins, Mom’s Apple Cake, and Mini Apple Crisps, to name a few.

Are Apple Pie Stuffed Won Tons Difficult To Make?

The recipe is fairly straight forward and simple. Won tons are lightly “stuffed” with a fresh apple pie type-mixture, then fried quickly in hot oil, dusted with powdered sugar and garnished.

Here they are, hot out of the skillet, and lightly dusted with powdered sugar. Now the apple pie stuffed won tons are about to get “prettied up”!

Garnish The Apple Pie Stuffed Won Tons To Serve

Anyway… this is a really delicious and easy recipe (it sounds harder than it really is). The dessert also look very appealing when you “pretty the apple pie stuffed won tons up”.

You can do this with some caramel sauce and a scoop of vanilla ice cream, and a fresh sprig of mint! YUM… they are soooo good!

*FYI – Here’s an important tip, just so ya know… they are best if you serve them warm, right after cooking. Ingredients
For WonTons:
  • 3 green apples (Gravenstein, Granny Smith), peeled and finely chopped
  • 2 Tablespoons water
  • 1/2 teaspoon cinnamon
  • 1/4 cup granulated sugar
  • 1 teaspoon butter
  • 12 WonTon wrappers (found in most grocery stores)
  • 2 cups Vegetable oil (enough to cover bottom of non-stick skillet with 1 inch of oil - about 2 cups)
For Garnish:
  • 2 Tablespoons powdered sugar (sifted, for garnish)
  • Caramel Sauce (optional, but great served with the wontons)
  • Vanilla ice cream (optional, but great served on the side)
  • Mint sprigs (optional, but makes finished dessert look "pretty")
Instructions
  1. To Make Filling: Put the chopped apples, water, cinnamon, sugar and butter in a medium saucepan. Cook on medium heat, stirring occasionally, until the apples have become soft, and the mixture is thick and bubbly. (this usually takes about 5-6 minutes). Remove from heat and let mixture cool.
  2. To assemble and cook WonTons: Remove a WonTon from wrapper carefully. Place on flat work surface, with corner point facing you (diamond shaped). Place approx. one Tablespoon of apple mixture into the center of the WonTon. Be sure to keep the edges of the WonTon wrapper free of apple filling, so the edges will seal.
  3. Using a pastry brush (or your fingers), lightly brush the edges of the WonTon with water (the water helps the edges to adhere to each other), pull half of the WonTon over the apple pie filling, and lightly crimp edges together (with the tines of a fork) to seal. Important! Make sure the edges are sealed... or the filling will spill out when you cook them!
  4. Heat oil to 375 degrees in a non-stick or electric skillet. When oil has reached temperature, carefully (HOT OIL!) place 3 or 4 WonTons at a time into the skillet. Fry for about a minute, or until the WonTon is golden brown, the carefully flip to the other side and cook until golden brown. When done, remove them to paper towels. Repeat process with remaining WonTons.
  5. Sift powdered sugar lightly over tops of warm WonTons.
  6. To serve finished WonTons: Drizzle caramel sauce onto individual serving plates. Place 3 WonTons on top of the caramel sauce. Garnish with a sprig of mint, and a scoop of vanilla ice cream. Enjoy!

Steel Cut Oats… Who Knew I Would Like them?

I grew up eating oatmeal…and didn’t like it so much. I preferred my oatmeal in a COOKIE, thank you very much! But as an adult, I’ve discovered I actually like oatmeal, especially steel cut oats! The caveat to this is I like steel cut oats if they are “classed up” a bit with some tasty add-ins!

This is THAT kind of steel cut oats recipe! The kind of recipe where you take humble oats and add in chopped apples, cinnamon, pecans, dried cranberries, brown sugar…well, you get the picture!

These are the steel cut oats I used for this recipe.

I love to make this recipe because by the time I add all the good stuff in, I have enough for 6 decent sized servings. The oats will really firm up when refrigerated!

Do You Eat Apple Cinnamon Steel Cut Oats HOT Or COLD?

My preferred method for eating them is to eat them cold, with a dollop of plain Greek yogurt on top, along with a drizzle of honey, and a pinch of cinnamon on top (for pizzazz!) It’s so good!

Of course, this recipe is great eaten hot, as well… (but remember to leave off the yogurt and honey at the end if you eat them that way).

Apple Cinnamon Steel Cut Oats Are Great For “On The Go” Meals

It is very convenient to package these apple cinnamon steel cut oats up in little plastic cups with lids on them…then my oatmeal becomes a “Grab and Go” kind of meal.

I used to take a container of apple cinnamon steel cut oats to work, for a quick and filling breakfast or break treat. With a dollop of Greek yogurt and a drizzle of honey on top, this was a delicious “to go” breakfast!

Keep the covered containers in the refrigerator, then just grab one any time you want, or you can take it with you in the car if you’re in a hurry! See how cute they look in their little “Grab and Go” cups?

The first time I tried making apple cinnamon steel cut oats and decided to eat them cold, I was skeptical I would enjoy them served that way. Well, I was totally surprised at how fantastic it tastes!

If you told me a year ago that I’d enjoy COLD apple cinnamon steel cut oats I would have laughed. I’m not laughing now…I LOVE it, and I love the convenience of being able to make a few servings extra, ahead of time. Perfect… Hope you will give this recipe for apple cinnamon steel cut oats a try. Ingredients
  • 2 cups water
  • 1 cup steel cut oats
  • 1/8 teaspoon salt
  • 1 green apple , large, peeled, seeded and chopped
  • 1/2 cup dried cranberries
  • 1/2 cup pecans (or walnuts), chopped
  • 2 Tablespoons brown sugar , heaping
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 6 Tablespoons plain , Greek yogurt (for topping oats-this is optional, but I recommend)
  • 1 teaspoon Honey (to drizzle on top of yogurt topping-this is optional, but I recommend)
  • Additional cinnamon (to sprinkle on top of yogurt and honey-this is optional, but I recommend)
Instructions
  1. In a medium saucepan, bring the water to a boil. Add the steel cut oats, salt, chopped apple, dried cranberries, chopped pecans, brown sugar and cinnamon. Stir well to combine and continue cooking and stirring occasionally for approximately 7-10 minutes, until water has all been incorporated into oats.

  2. When oats are done cooking, remove pan from heat; add in the vanilla and stir. If eating warm, serve it at this point.

  3. If eating cold (YUM), place oat mixture into a covered container and refrigerate for at least 4 hours. When ready to serve, divide into 6 equal portions. On top of each serving, place a large dollop (1 Tablespoon) of yogurt, then a drizzle of honey on top of yogurt, then a sprinkle of cinnamon on top of honey. Serve and ENJOY!

Recipe Notes

I have also added in just a bit of vanilla almond milk at times to the finished product (especially if eating it warm). If desired, you can also add in 1/2 cup milk to the recipe...just decrease the water used to 1 1/2 cups.

Amish Apple Fritters

Amish Apple Fritters are delicious fried doughnuts, made from scratch with a simple batter, fresh apple chunks, cinnamon, and a sweet glaze. I have two little secrets… I am a “Morning Person”, and Apple Fritters are my favorite doughnuts! I LOVE these delicious, crunchy friend doughnuts! They’re made easily from scratch with a simple batter containing fresh apple chunks, cinnamon, and are covered with a sweet glaze.

For over 20 years, I had to be up at 5:30 A.M. every workday to leave by 6:30 to be in my office at 7:00 A.M., ready for a day’s work. Not entirely convenient for making apple fritters! Ha Ha. These days I find myself in a different season of life…no children at home to get up and out of bed before leaving…AND my commute to the office these days is no more than walking upstairs to my home office, where I work for my husband’s company.  My world has changed drastically!

My” new normal” is… instead of grabbing a large mug of coffee and shoving toast in my mouth while heading out the door as I did while working full-time, I now seem to revert to “boring” breakfasts such as oatmeal or toast and eggs. HOWEVER… I do love a great apple fritter, doughnut or pastry occasionally. I mean, really, who doesn’t??? (if we’re truth-telling here).

How I Found This Recipe For Amish Apple Fritters

I love to try new recipes and learn new cooking techniques in the kitchen, AND my favorite doughnut of all time is the humble, yet glorious Apple Fritter. One day, while looking at recipes on Pinterest,  I saw one for these doughnuts, written by a great-grandmother named Polly.

I could tell I would like this easy recipe from the very beginning (aren’t ALL recipes written by great-grandmothers wonderful?)… so I made them, and sure enough…these fritters were amazing! Sometimes, a warm apple fritter and a strong cup of coffee are exactly what this old girl wants. Please notice I did not say what this old girl needs… now THAT’S another story, *cough, cough!

Hope you enjoy them…occasionally (wink wink)! Here’s how easy they are to make…you’ll be a doughnut maker in no time!

How To Make Amish Apple Fritters

First, mix up the batter. In a large bowl (or the bowl to a stand mixer), cream the sugar and eggs for 1-2 minutes with an electric mixer. To this batter, add the flour, baking powder, cinnamon, salt and  milk. Mix these ingredients together well.

In a separate bowl, mix the chopped apples with the lemon juice. Using a spoon, add the apple mixture to the batter and stir well, to combine.

Cooking Amish Apple Fritters

Heat vegetable oil to 375° F. in a large skillet or electric skillet. You will need a deep-fry thermometer or an electric skillet with temperature control. NOTE: It is very important to make sure the temperature is hot enough to fry the fritters correctly.

Once the oil is at 375° F, scoop out really large spoonfuls of the fritter batter (as big as you can get ’em!). Carefully slide the fritter into the hot oil, because that oil is HOT!

See in the photo below how the apple fritters are starting to turn golden brown? This is a GOOD thing. When they get to a true golden brown color, carefully turn the fritters over to the other side. This usually takes about 2-3 minutes for the first side.

I found it helpful to use two spoons to carefully flip the Amish apple fritters over.  Once they have been flipped over, continue cooking.

How Long Do You Cook The Amish Apple Fritters?

The total cooking time for the Amish apple fritters is approximately 2-3 minutes on each side. NOTE: The cooking time may vary a bit, based on two things: the SIZE of the fritters you cook, and having the proper oil temperature to cook in.

When the fritters become nice and brown (see photo below) on both sides, then you know they will be ready and cooked through. You might need to flip them over again to make sure both sides are deeply browned.

IMPORTANT TIP: Once fritters are done, make sure that the oil temperature returns back to 375° F, before adding the next batch of Amish Apple Fritters to cook!

Once each batch of apple fritters are done, use a slotted spoon to remove them, one at a time, to a paper towel lined platter or wire rack to cool. You will need several layers of paper towels to absorb any remaining oil on the fritters.

Glazing Amish Apple Fritters

Now all you need to do is make the quick and easy glaze for the finished apple fritters! It is important to let ALL the fritters cool completely, before adding the glaze to them!

Mix up the glaze in a medium sized bowl. Use a pastry brush to “paint” it onto top and bottom of the cooled fritters. Let the icing firm up a bit, then these delicious Amish apple fritters are ready to eat, and enjoy!

The Amish Apple Fritters Are Ready To Enjoy!

Pour yourself a great cup of hot coffee or tea… and take a bite out of one of those yummy Amish Apple Fritters!

  • 1/4 tsp. vanilla
  • 3-4 tsp. warm water (thin enough to make the glaze "paintable")
Instructions
  1. In a large bowl (or the bowl to a stand mixer), cream the sugar and eggs for 1-2 minutes with a mixer.
  2. To this, add the flour, baking powder, cinnamon, salt and milk. Mix these ingredients well.
  3. In a separate bowl, mix the chopped apples with the lemon juice. Using a spoon, add the apple mixture to the batter and stir well, to combine.

  6. When they get to a true golden brown color, carefully turn the fritters over to the other side (I used two spoons to carefully flip them) and continue cooking. (This should take approx. 2-3 minutes on each side).
  7. When the fritters become brown on both sides (you might have to flip them over again to make sure both sides are brown), then you know they will be ready and cooked through.
  8. Using a slotted spoon, remove the fritters, one at a time, to a paper-towel lined (several thicknesses) plate to drain and cool.
  9. To make a glaze for the tops of the fritters, mix together the powdered sugar, vanilla and water in a small bowl until you have a nice "paintable" glaze.
  10. Using a pastry brush, brush this glaze over the entire top of the fritter. Let glaze harden slightly, turn it over and "paint" the glaze on the bottom. Place glazed fritters on wire rack; let glaze harden, then serve.
Recipe Notes

If you do not like glaze on your fritters, the author of this recipe also suggests sprinkling the hot "right out of the fryer" fritters with powdered sugar and cinnamon. For mine, I used the glaze option and they were perfect.
Tip #1: These apple fritters are at their very best the first day you make them!
Tip #2: If using self-rising flour as substitute for all purpose flour, omit baking powder and salt from the recipe.
Tip #3: Once oil cools, strain it, store it in a container in refrigerator to use on another batch!

Yesterday a friend of mine named Kelly shared this recipe for Apple Cinnamon Bread on Facebook.  I thought it sounded good, so into the kitchen I went. She mentioned she was in the mood to try this recipe. Well… since I love just about anything that has apples and cinnamon in it, I copied the instructions down to add to my collection of bread recipes.

Apple cinnamon bread sounded delicious!  Instead of waiting around till “someday”, I decided  to give it a try and see for myself how it tasted. I am grateful she shared this recipe, because it’s REALLY good! Here’s how to make it:

Making Apple Cinnamon Bread

The recipe is incredibly simple…and if you enjoy the flavor combination of apples and cinnamon, you will enjoy this recipe! The recipe makes one large loaf, but could be easily doubled. Here’s some pics to make you want to make this yummy loaf of sweet bread!

Firm tart apples are chopped. Truly, that is about the hardest part of the entire recipe! Once that part is done, you’re ready to make apple cinnamon bread!

Making the batter for this bread is so easy! It doesn’t take much time or mad crazy skills, either! Really! It just takes some mixing, and then you’re good to go!

Use A Standard Sized Loaf Pan To Make Apple Cinnamon Bread

The batter for the bread is placed evenly into a standard sized loaf pan. Now the bread is all ready for the oven! The bread is baked for between 30-40 minutes, or until done in the middle when tested. A toothpick inserted into the top of the loaf should come out clean, once done.

Here is a photo of the bread right after it has baked, cooled, and been removed from the pan. It sure looks good! The kitchen smells pretty good, also!

Ingredients
  • 1/3 cup brown sugar (not packed)
  • 1 teaspoon ground cinnamon
  • 2/3 cup granulated sugar
  • 1/2 cup butter (1 cube), softened
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 1 apple , large, peeled and chopped (I used Granny Smith)
Instructions
  1. Preheat oven to 350 degrees. Grease and flour a 9x5 inch loaf pan.
  2. In a small bowl, mix together the brown sugar and cinnamon; set bowl aside.
  3. Using an electric mixer, beat the butter and granulated sugar together until smooth.
  4. Add in the eggs, one at a time, beating until completely blended; then add the vanilla extract and mix until smooth.
  5. In another bowl, mix together the flour and the baking powder. Stir this into the bowl with the butter mixture. Add in the milk, beating until it is fully mixed into the batter.
  6. Pour HALF the batter into the loaf pan.
  7. Add HALF the apples and then HALF the brown sugar mixture, covering the batter.
  8. Pour the rest of the batter over the apple/brown sugar layer. Top this again with the rest of the apples, then the brown sugar mixture.
  9. Lightly pat down the apples slightly into the batter; then, using a knife tip, gently swirl the brown sugar mixture through the apples.
  10. Bake in a preheated 350 degree oven for approximately 30-40 minutes, or until a toothpick inserted into the middle of the loaf of bread comes out clean. (Mine took 40 minutes, but oven temperatures vary, so keep an eye on it from the 30 minute mark on...)

Do you have one of those recipes? You know…the recipe you love to make when asked to “bring the dessert” to a friend’s home for dinner. Or maybe it’s the recipe you make when you have guests over for dessert and coffee? Yep…this recipe for apple shortbread tart is MINE,  and yes…it’s THAT good.

How I Found This Recipe

I received this recipe on a little 3×5 card many years ago at a Christmas event for women at the church we attend. Since I never turn down a free recipe, I put it in my purse and brought it home. My thought was that “maybe someday” I would see if it was any good.

Well, that was a long time ago, but I tell you truthfully, I have made this delicious dessert so many times since then I’ve lost count! I’ve even “adapted” the recipe for other kinds of fruit and it works like a charm (peach and boysenberry), but this original version using tart apples is my absolute favorite!

The buttery, shortbread crust with the apples, cinnamon and crumbly shortbread topping is so good! I wish I knew WHO to thank for this, but, my little 3×5 card only had the recipe on it, with no source noted. So, to the random mystery person out there in the big ol’ world who created this recipe originally…THANK YOU! Update 5/11/14: Turns out one of my dearest friends provided the recipe card I picked up…go figure. Thank you, Shari!

Here’s How To Make This Apple Shortbread Tart

Begin by preparing the shortbread crust. It’s easy to do in a food processor. You can also use a hand held pastry blender to mix the ingredients.  It’s important to add butter to make a good shortbread crust!  Place all the crust ingredients in the processor, EXCEPT FOR THE EGG YOLKS. 

Process until the butter has been reduced to the size of peas. Once the butter in the mixture has been reduced to the size of peas, add the egg yolks and process only until just combined.

Form The Crust In A Tart Pan

Firmly press the crust mixture into the bottom and up the sides of a tart pan (with removable bottom). Remember to reserve some of the shortbread topping for later! Set the reserved shortbread topping aside, because it’ll be used later, to top the dessert.

Add Apple Filling and Shortbread Crumb Topping

Mix the apple slices with the brown sugar/cinnamon mixture in a large mixing bowl. Arrange the apple slices on top of the shortbread crust, mounding them up a bit in the middle..

The remaining shortbread crust mixture is sprinkled over the top of the apples as a streusel. Use all of the crumb topping to cover the entire surface. Now it’s ready to go into the oven!

Bake The Apple Shortbread Tart

Bake the fruit tart at 400°F for about 45 minutes.  Once done, the fruit filling should be slightly bubbling around the edge, and the top will be golden brown. Here is what the apple shortbread looks like, fresh from the oven and cooling down a bit on a wire rack!

After the apple tart has cooled for 5-10 minutes, remove it from the tart pan. To do this, gently push up from the bottom to separate the bottom tray from the scalloped edge ring.

Time To Enjoy This Apple Shortbread Tart

Slice the apple shortbread tart into 8 pieces, and serve warm, or at room temperature. Sometimes I serve the apple shortbread tart with homemade vanilla ice cream and drizzle it with a warm golden caramel sauce, for an extra burst of flavor..

Here is the apple shortbread tart, served with a dark browned caramel sauce over the tart and a scoop of vanilla bean ice cream. Can you tell I’ve made this dessert a LOT?

Now the only thing left to do is grab a fork!  Dig in and enjoy a big old slice of this absolutely DELICIOUS apple shortbread tart! Caramel swirl ice cream was served with the apple tart this time (seen in photo below). Boy was it yummy!

Ingredients
For the crust:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup COLD butter (cut in small chunks)
  • 2 egg yolks
For the filling:
  • 1 1/4 pounds tart apples (about 6 med. apples - Gravenstein or Granny Smith for best results)
  • 1/4 cup brown sugar , packed
  • 1 Tablespoon all-purpose flour
  • 1/2 teaspoon cinnamon
Instructions
  1. Preheat oven to 400 degrees.
  2. Blend all crust ingredients EXCEPT FOR EGG YOLKS until they are the texture of coarse meal. (You can use a fork, a pastry blender or a food processor). Add egg yolks and mix well to blend. **Set aside 1/4 of this mixture and save for later**. Using the remaining 3/4 of the crumbs, firmly pat them down over the bottom and up the sides of a tart pan with removable bottom disk or a large pie pan. Make sure crust is firmly pressed down into the pan and the sides to form a solid crust.

  3. Peel, core, and cut the apples into thin slices. Place sliced apples in a large bowl. Add 1/4 cup brown sugar, 1 TBSP flour and 1/2 tsp. cinnamon. Mix well to coat apple slices.

  4. Once apples and dry ingredients are mixed together, gently "pour" or spoon apples onto crust. Position apples so they mound in the center and fill in the crust.

  5. Sprinkle reserved 1/4 of the crust mixture over the top. I find it helpful to hold one hand up around the edge of the pan to try and catch the crumbles before they fall off the tart. Just scoop up any crumbles that fall onto your work surface and put them back on that tart! Cover the entire top of the tart.

  6. Bake at 400 degrees for 15 minutes, then reduce heat to 350 degrees and bake until the top begins to turn golden brown (approx. 25-30 minutes). Keep an eye on it and remove tart when golden brown. Let cool just a bit. If using a tart pan, hold your hand on the bottom of the tart and gently press upward on the metal disk to release the tart from the pan. Place the tart (keeping disk on the bottom of tart) on serving dish, slice and serve.

  7. Serve warm, with vanilla ice cream...and ENJOY!

Anyone who knows me well knows I LOVE a good scone with a strong cup of coffee!  I also love to collect and try new recipes for scones…it’s what I enjoy doing! That is why I tried this yummy recipe for Apple Cinnamon Scones recently!

I found this recipe for apple cinnamon scones on Pinterest several days ago and thought it sounded pretty good. Since I love the smell of apples and cinnamon, I had a hunch I would love that same flavor combination in a scone (what’s not to love?), so off to the kitchen I went.

In no time at all these delicious scones were cooling on our kitchen counter, just waiting to be lovingly gazed at… and then devoured. These Apple Cinnamon Scones are easy, economical to make, and taste delicious. Give them a try…I think you’ll like them!

Making Apple Cinnamon Scones

Yum. The apple cinnamon scones are out of the oven, cooled, and are now ready to eat! Look at those apple chunks! I really think you’re gonna enjoy them.

Ingredients
For Scones:
  • 2 cups all-purpose flour
  • 2/3 cup rolled oats
  • 1 Tablespoon baking powder
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup COLD butter

  • 1/4 cup honey
For Topping:
  • 2 Tablespoons rolled oats
  • 1 Tablespoon Turbinado sugar (if you do not have this, substitute granulated sugar)
  • 1/2 teaspoon ground cinnamon
  • 2 Tablespoons milk
For Glaze:
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2-3 teaspoons warm water (or till thin enough for "drizzling" tops of cooked scones
Instructions
  1. Preheat oven to 400 degrees. Prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, whisk together the flour, oats, baking powder, cinnamon, baking soda, salt and nutmeg. (You can also use a food processor for this, if desired)
  3. Cut in the COLD butter with a pastry blender (or pulse until cut into small crumbs in a food processor).
  4. In a separate bowl, mix together the milk, honey and apple. Add this mixture to the dry ingredients; mix until blended.
  5. Turn the dough out onto a lightly floured work surface. Knead the dough gently until all ingredients are combined. (You might want to lightly flour your hands) Form the dough into an 8-9 inch circle and about 3/4 inch thickness. Slice into 8 wedges. Carefully put the wedges onto prepared baking sheet (keep them in a circle, but leave about 3/4 inch between each wedge).
  6. In a small bowl, mix together the topping ingredients, EXCEPT FOR THE MILK.
  7. Using a pastry brush, lightly brush and cover the tops of each scone with the milk.
  8. Sprinkle each scone with the topping ingredients evenly till all of the mixture has been distributed.
  9. Bake at 400 degrees for approximately 20 minutes (or until golden brown). Remove scones from oven and let them cool on a wire rack. Mix glaze ingredients and decoratively drizzle glaze over tops of scones when cool. Serve... and enjoy!
