Thick, creamy, and loaded with Southwestern flavors, this really is a wonderfully easy and versatile dressing.

It is amazingly simple to prepare in under 10 minutes from start to finish, and tastes fantastic, no matter how you decide to serve it. Here’s how to make this delicious dressing/dip:

What’s In Avocado Cilantro Lime Dressing?

The ingredients necessary to make avocado cilantro lime dressing are all fairly common. They are avocado, cilantro, lime juice, red wine vinegar, olive oil, red onion flakes, cumin, and salt/pepper. See the printable recipe card at the bottom of this post for exact measurements.

It’s EASY To Make Avocado Cilantro Lime Dressing

Making this creamy salad dressing (or topping) could not be any easier! Measure all the ingredients except for the salt and pepper into a blender. Blend on high speed until the dressing is smooth and creamy. Once done, season to taste with salt and pepper.

If you do not own a blender, you can use an electric mixer, to combine the ingredients until they’re smooth and creamy. It might take just a bit longer than if using a blender, but this is a good alternative. Once done, season to taste with salt and pepper.

TIP: If you’re using this as a traditional salad dressing and want it to be thinner, no problem! Simply thin it slightly by adding a tiny bit more olive oil and red wine vinegar, and mixing well.

What Can You Do With Avocado Cilantro Lime Dressing?

The avocado cilantro lime dressing can now be used as a dip or a topping, and wow, does it taste wonderful! Grab some tortilla chips for a flavor-packed creamy avocado dip, or top a steamin’ hot baked potato with this dressing (instead of sour cream). Yum. Can you see the specks of cilantro in creamy dressing, shown in the photo below? Oh yeah.

I also use this as a dressing for my yummy black bean, corn and tomato salad. The creamy dressing tastes fantastic when mixed into this delicious side dish, as well.

This tangy dressing, with a hint of citrus, is a perfect addition to most mixed green salads. Another plus is that is is ridiculously EASY to make, which is always a win-win, in my book!

What’s In This Citrus Balsamic Vinaigrette?

This vinaigrette is made using only FOUR ingredients! These ingredients are extra virgin olive oil, honey, balsamic vinegar, and fresh squeezed orange juice. That’s it. All are fairly common pantry ingredients, which makes it very convenient to whip up this salad dressing whenever you need it.

The salad dressing ingredients are olive oil, honey, orange juice and balsamic vinegar.

To make the citrus balsamic vinaigrette, measure the oil, balsamic, OJ, and honey into a small bowl. Grab a wire whisk or a fork, and whisk the ingredients together until the dressing has “emulsified”. This will only take a minute or so.

To “emulsify” salad dressing means to mix so thoroughly that ingredients that normally don’t combine well (like oil and water), can “come together” in a way that transforms them into a stabilized unit. Most vinaigrettes are emulsified, to fully incorporate the vinegar and oil, which are pretty standard ingredients.

The citrus balsamic vinaigrette is mixed well before using to dress a salad.

Ready To Serve!

Once the dressing has emulsified, it is ready to drizzle onto your favorite green salad. We love the flavor of this vinaigrette served on my Berry and Orange Spinach Salad, which is shown below. It tastes wonderful!

Storing The Salad Dressing

Because the vinaigrette is so easy to make, you can quickly make up the recipe just a few minutes before dinnertime. The vinaigrette can be stored in a covered container in the refrigerator. Be sure to whisk it again, right before you serve it.

Olive oil can slightly thicken once chilled in the fridge, so give it a quick stir or let it warm up to room temperature a bit before stirring and serving.

Do you enjoy peanut sauce? I sure do! After trying this sauce on pasta quite a few years ago, I decided to learn to make it myself at home! The bold flavors in peanut sauce help to compliment a number of pasta, noodle or quinoa dishes. This delicious peanut sauce can also be served with grilled chicken skewers (commonly called chicken satay).

Guess what? This amazing sauce is TOTALLY EASY to make, so if you can measure and stir, you can make it, too! Here’s how to make this ridiculously easy (but scrumptious) Thai peanut sauce in about 5 minutes:

Make The Thai Peanut Sauce

The ingredients for Thai peanut sauce are creamy peanut butter, soy sauce, Sriracha, brown sugar, lime juice, garlic, rice wine vinegar, ground ginger, sesame oil, and hot water. To make the sauce, place all ingredients EXCEPT for the hot water into a medium sized bowl. Set aside the water to add at the end (you will need it hot, but not boiling).

Measure the peanut sauce ingredients into a medium sized bowl.

Stir these ingredients together until they are well blended. The sauce will be fairly thick at this point (sorry about the slightly blurry photo!).

Stir the sauce together, and it will be fairly thick.

Add 1/2 cup of very hot water to the peanut sauce. Stir or whisk the sauce well, until all the ingredients are fully blended. Adding hot water helps to thin out the thick peanut butter, because that makes the sauce easier to pour or drizzle.

The Thai peanut sauce is ready to use once the water is fully incorporated. Whoo Hoo! You just made Thai peanut sauce! If you take a little taste, you can see just how yummy it tastes. Go on, because you know you want to try it, right?

Add hot water and stir until the Thai peanut sauce thins out.

How Can You Use Thai Peanut Sauce?

Adding peanut sauce is often used to bring bold flavors to a variety of dishes. We’ve enjoyed peanut sauce in Thai Quinoa Salad (seen below). Sometimes I alter the sauce recipe a bit, but 99% of the time, this is my “go to” Thai-inspired peanut sauce.

My absolute FAVORITE way to enjoy Thai peanut sauce is mixed with pasta! In the past I have made Vegetarian Spicy Noodles in Peanut Sauce. I’ve also used a slight variation of peanut sauce in my yummy Thai Chicken Linguini. Both recipes are coated with creamy peanut sauce, and taste delicious!

Why buy teriyaki marinade when it is so very easy to make it at home? Especially with this coronavirus quarantine going on right now. You can make your own from HOME! This handy dandy marinade can be made quickly to enhance many meat entrees. It’s so quick and easy to make, it sure can save time running to the store!

Marinating is an easy way to basically BATHE the chicken (or other meats) in FLAVOR! A marinade helps to tenderize meats and permeate them with delicious seasoning that will carry over into the cooking process!

This homemade teriyaki marinade is fantastic, and I’ve used it so many times over the course of MANY years! My favorite way to use this sauce is on chicken, which you can see in my photos below. I adapted this recipe from several of my own recipes that use different types of teriyaki sauce or glaze. Today I want to share the quick recipe with you.

It’s EASY To Make Homemade Teriyaki Marinade!

To make the marinade, you will need a medium sized mixing bowl, a whisk, and 7 ingredients (including water). Place all of the marinade ingredients into the bowl.

The ingredients for the marinade are low sodium soy sauce, honey, brown sugar, garlic, fresh ginger, apple cider vinegar and water. Whisk these together until the honey is fully dissolved, and the ingredients are fully combined. See all that minced garlic? YUM!

Marinating Chicken Breasts

This recipe makes enough marinade to coat 4 large chicken breasts. When I took these photos I made a full batch of marinade (as written in the recipe below), but was only cooking two chicken breasts, as you can see. The recipe is EASILY doubled or tripled, however, depending on the quantity you will need.

Place the mixed marinade into a resealable storage bag or into a covered container. Add the fresh or thawed chicken (or other meat you are marinating). Seal the bag. Use your hands to “smoosh” the bag around so the chicken becomes fully covered in marinade. If using a container, cover the chicken with marinade using a spoon, or by dredging all sides in the sauce, until covered. Place a lid on the container.

Chicken breasts are added to the marinade in a resealable bag.The teriyaki marinade covers the meat to give it flavor.

Marinating Time!

Place the sealed bag or covered container into the refrigerator to let the meat marinate. The time to marinate will depend on the recipe you are using. Follow your recipe’s directions for length of marinating time, but I would recommend always at least 30 minutes for peak flavors to permeate the meat!  Once done marinating, remove the chicken (or other meat) from the marinade, and let the excess drain off. Discard the marinade that has been in contact with raw meat.

NOTE: When we grill teriyaki chicken or steak outside, I set aside a few Tablespoons of the marinade BEFORE adding the meat. We can then use the reserved marinade to brush on the chicken or steak while they’re on the grill.

Time To Cook The Marinated Meat

We enjoy teriyaki chicken or steak, cooked over hot coals on our Weber BBQ, as weather permits. We live in Oregon, so we BBQ outside as often as we can, when it is not raining.

Marinated meats, like these chicken breasts can also be cooked indoors on a cast iron grill, on a George Foreman electric grill, or baked or broiled in the oven! However you choose to cook the meat, the teriyaki flavor will shine through!

What Spices Are IN Italian Seasoning Mix?

How Do You Make Italian Seasoning Mix?

The spices in this recipe need to be crushed together. The best way to do this is by measuring out all the ingredients into a food processor or a spice/coffee grinder. Pulse spices together until they are pretty finely ground. There you go… you just leaned how to make Italian seasoning! I’ll bet you didn’t even break into a sweat, either!

The spices are ground in a food processor or coffee grinder.

This recipe will yield a total of about 1/2 cup of Italian seasoning mix, which is about 8 Tablespoonfuls. Place the spices into a container with a lid, label it, and add it to your pantry! The spices should hold their peak flavor for up to 6 months or so. Use this mix anytime a recipe calls for Italian seasoning.

After you make Italian seasoning, it is stored in an airtight container.Once you make Italian seasoning, add it to airtight container with lid, and store.

I love to find ways to make my own spices to keep in our pantry.  Sometimes a recipe calls for a tiny bit of a spice I don’t have handy, which means a trip to the store to shell out some bucks for a whole jar! Recently I found a homemade spice recipe I want to share, that shows you how to make allspice in under 5 minutes, if you need a quick substitute!

Did You Know This About Allspice?

There is a plant common is certain areas of the world called the pimenta dioica. Allspice comes from the berries this plant produces. Whole allspice berries are actually dried, unripe fruit that have been harvested from this plant. When the dried berries are finely pulverized, the result is ground allspice.

Back in the early 1600’s, the crushed, ground up berries were given the name of “allspice” by the English. Apparently they thought the flavor of these dried, unripened berries was VERY similar to that of 3 spices combined: cinnamon, cloves and nutmeg! They used “allspice” to flavor their various meats and desserts. (Source: Wikipedia) Below is a photo I took of some whole (dried) allspice berries from my pantry, to show you what they look like.

How To Make Allspice

TRUTH FACT: MOST of us don’t have the time or the ability to grow a pimenta dioica plant, harvest and roast the unripe berries, and then grind them, all while making a recipe. This “quick fix” will provide the same flavor, should you need allspice to use! Knowing how to make allspice (quickly) will also save you a trip to the store to buy it!

The three ingredients necessary to make this allspice substitute are… you guessed it! Cloves, cinnamon and nutmeg (all ground). Make this mix in a pinch if you need allspice for a recipe, and all will be right with the world.

You will need cloves, cinnamon and nutmeg to make allspice seasoning.

Measure out the spices into a small bowl. Stir the spices together and try to get rid of any lumps. That’s it! you can use this allspice mix as a quick substitute in recipes calling for ground allspice!

Storing Allspice

Store the seasoning in an airtight container once the ingredients are mixed.  The recipe, as written below (in the printable recipe card) will yield about 1/2 cup of allspice (8 Tablespoons). Fill and then label the container, and add it to the other spices in your pantry. It should hold its flavor up to about 6 months (maybe more)!

Allspice should be stored in a labeled, airtight container.

Has anyone out there noticed just how expensive spices have become? We sure have! I try to keep a lot of spices available in my pantry. However, every now and then a recipe calls for a spice mixture I don’t have, like jerk seasoning, and off to the store I go, to buy it!

After realizing how easy it is to make seasoning mixes from scratch (using spices I ALREADY have), it’s a whole new game! Why make a separate trip to the store when it is EASY and quick to make a spice mix from scratch at home? We’ve enjoyed using this mix to make easy grilled chicken with jerk seasoning!

What Is Jerk Seasoning Used For?

Jerk seasoning is primarily used to season meat, like chicken fish, beef or pork.  That is the way it is most frequently used. It is used a lot in Jamaican-style recipes, and is associated closely with this cuisine, and lends its unique flavor to these meats.

Did you know it can also be used in other ways? Jerk seasoning can also be added to mayonnaise (in small amounts) to give it an extra kick, for sandwiches or burgers. You can also mix a bit of it with fresh mashed avocado, and serve it as a unique appetizer dip!

Make The Jerk Seasoning

Place allspice, brown sugar, cumin, cloves, cinnamon, salt, pepper and cayenne pepper in a small bowl. Give these spices a good whisk or stir, until they are fully combined. NOTE: In traditional jerk seasoning, scotch bonnet peppers are used, but the cayenne pepper in this recipe will add the little bit of extra heat instead!

Make sure any lumps are broken down. Congratulations! You have just made your very own jerk seasoning from scratch!

All the spices for this seasoning mix are combined in a medium bowl.Once blended the jerk seasoning mix is ready to store or use.

Storing Jerk Seasoning

Store the jerk seasoning in an airtight, sealed container, once combined. Now you can keep it in your pantry until you’re ready to use it! It should keep it’s full flavor potency for about 6 months. TIP: Don’t forget to label the jar, because no one wants to have their cinnamon toast accidentally made with jerk seasoning! Just sayin’!

Store the jerk seasoning in an airtight jar or container.

Ready To Grill Meat Using Jerk Seasoning?

Add 1 Tablespoon of vegetable of oil (whatever type you prefer) to the jerk spices (the full portion). Stir the mixture well, to combine the oil with the spices.

Add oil to the seasoning mix and combine, when you need it to grill meat.

The seasoning mix (in the photo below) will look like this, after the oil has been mixed in.

This is what the seasoning looks like after being blended with oil before spreading on meat.

Here is a photo of chicken breasts, fully coated with the jerk seasoning rub. Just rub it into the meat, and the chicken is ready to grill! There should be enough of the jerk rub mix to coat 6-8 pieces of chicken.

The jerk rub adheres well to the meat as it cooks, and the result is this uniquely flavored Jamaican-style chicken!

While searching for salad recipes recently, I discovered this recipe for a homemade salad dressing, which featured citrus (fresh squeezed orange juice and zest) and poppyseeds! I thought it sounded good so I made it, with only a couple slight changes to the original, and used it to dress our salad.  It’s FANTASTIC!

I love to make salad dressings from scratch! Not only do you avoid a lot of the shelf stabilizing EXTRA ingredients found in commercially prepared bottles of salad dressing, but honestly… it’s so EASY and usually far more cost effective to simply make it yourself!

Other Homemade Salad Dressings You Might Enjoy!

How To Make Citrus Dijon Salad Dressing

This particular recipe for Citrus Dijon salad dressing can be made in UNDER 5 minutes, and uses some very basic pantry items. Here’s the “cast of characters”: fresh squeezed orange juice, oil, poppy seeds, Dijon mustard, honey, orange zest, and simple seasonings. Easy peasy.

Mixing The Citrus Dijon Salad Dressing

All ingredients (except for poppy seeds) are placed in a small jar with a tight lid.  I found it easy to use the same jar and lid I was going to store the dressing in, for less cleanup! Another couple options are to put ingredients in mixing bowl and use a whisk to blend ingredients, or to use a blender (but you’ll have more to clean up… just sayin’).

You can see the before and after photos below.  Place the lid on the jar… and shake the jar hard for about 30 seconds (while holding the lid on tightly) until dressing has fully combined.

Add the poppy seeds, then put the lid back on and give jar a few more good shakes to blend the ingredients. That’s it! TA DA! You just made an incredible tasting citrus Dijon salad dressing!

All that’s left to do after that is give it a quick shake or stir right before serving, then pour some of this delicious Citrus Dijon salad dressing over the salad of your choice! I recently used it to drizzle on a yummy Spinach Pear Salad!  It tastes delicious, and can be made ahead of time, too!

Making the Salad Dressing Ahead Of Time?

If you will be making this salad dressing ahead of the time you will need it, keep it refrigerated until you’re ready to use it. Give it a good stir or shake to re-mix the ingredients, and then serve!

You Can Use Citrus Dijon Salad Dressing As A Marinade, Too!

We had a little bit of the salad dressing left over after making the salad (will keep for about a week in fridge), so a few days later I had a bit of a crazy idea.  Why not marinate fish kabobs with it!

That was a great idea!  The flavors of the citrus dressing paired perfectly with the fish (swordfish), and really enhanced the flavor… who knew? The kabobs were delicious, and were so very simple to make.

Start by making the dry spice rub. EASY! Place the dry rub spices in a medium sized bowl. Stir well, to fully combine ingredients. I cut the recipe in half, and even after cutting it in half, it made enough dry rub spice mix to season a pork loin roast, and a few whole chickens.

Using this Spice Rub On Whole Chickens

Cover all sides of a whole chicken with the dry spice rub, lightly rubbing it onto the surface of the meat. The slight moisture of the meat will help the spices stick! Sprinkle some of the spice mix into the cavity of the chicken.  When done, set seasoned chicken aside until ready to cook in a smoker or on the grill.

Here is a photo of a whole chicken with the rub on it. We cooked two chickens this time, on our Traeger grill; they both turned out perfect, with a great added flavor from the spices!

Using The Spice Rub On A Pork Roast

Here are a couple photos from when we used this spice rub on a pork loin roast! We covered all sides of the roast with the spice rub, smoked the pork, then roasted it, long and slow on our Traeger grill. We then shredded about half of the meat, added BBQ sauce, and made incredible tasting BBQ pulled pork sandwiches!

Ingredients
  • 1/3 cup dark brown sugar
  • 1/2 cup smoked paprika
  • 1/4 cup garlic powder
  • 1/4 cup salt
  • 2 Tablespoons black pepper
  • 2 Tablespoons onion powder
  • 1 Tablespoon cayenne pepper
  • 1 Tablespoon ground cumin
  • 1 Tablespoon dry mustard
Instructions
  1. In a medium sized bowl, combine all spice rub ingredients. Stir to mix, until all ingredients are fully combined.

  2. When ready to use, sprinkle rub on chicken or pork, and pat it down to adhere to surface of meat. Smoke or grill meat until done. Enjoy!

Store unused spice rub mix in an airtight container until next use.
    Recipe Notes

    As written, dry rub recipe makes almost 2 cups. I cut the recipe for the dry rub in half. The quantities are easy to cut in half (except for the 1/3 cup of dark brown sugar. If cutting brown sugar in half, use 2 Tablespoons PLUS 2 teaspoons brown sugar). If halved, you'll end up with about 1 cup of spice rub, which is enough for 3 pork roasts or chickens (about 3 pounds each). Each roast or whole chicken will need approx. 1/3 cup of the rub to cover. Store leftover spice mix in airtight sealed container.

    My husband loves to grill on our BBQ, and one of his absolute favorite things to grill is a nice steak (rib-eyes are his personal favorite). I don’t eat too much steak, but I did have a good sized piece last tie we grilled them, because I wanted to try this herb butter added to the cooked meat.

    Many restaurants serve their grilled steaks with a nice pad of flavored butter, because it adds just the perfect finishing touch to a good steak. I searched for and found a recipe on Pinterest that interested me, so I set out to try it! It’s so EASY to make, and it did add another layer of flavor to some pretty tasty steaks!

    What Ingredients Are Needed For Herb Butter For Steaks?

    The necessary items for this herb butter for steaks are only a few simple ingredients: softened butter, lemon zest, minced garlic, salt, pepper, and freshly chopped flat leaf parsley! That’s it!

    Mix softened butter with all the other ingredients until fully combined.  You will definitely want to use room temperature butter so it mixes easily. A fork will easily mix the ingredients. Once done, set the herb butter for steaks aside, until the meat is finished cooking.

    Season your steaks with your favorite seasoning. Our favorite is Montreal seasoning (found in most stores). We lightly seasoned the rib-eye steaks after removing them from the refrigerator and let them sit for 30 minutes to take off the chill.

    Onto the old Weber charcoal grill they went, and my hubby Ken (the official “GRILLMEISTER”) cooked them until they reached the desired doneness. I think the smoke from the BBQ must have affected his eyes, cause he’s trying to pour lighter fluid into his wine glass! Ha Ha.

    Once done, he removed the meat from the grill, and brought it in to be crowned with the waiting herb butter for steaks!

    To Add The Herb Butter

    I find it really convenient to use a small cookie dough scoop to top the steaks with the butter. You can also use a rounded Tablespoon of the herb butter. Both will work well!

    Top Meat With Herb Butter For Steaks

    As soon as steaks are off the grill, transfer them to a serving platter. Immediately top each steak with a small scoop of herb butter.  The heat from the steaks will begin to melt the butter and herbs onto the top of the meat.

    As the herb butter melts, it covers the top of the meat, and adds additional spices and flavor finish to a great steak! Let the steaks rest for a few minutes before serving, to allow time for the butter to melt AND for the internal juices in the steak to redistribute throughout the meat.

    That’s all you need to do to add this simple finishing touch to your favorite steak! I told you it was EASY! I really hope you will consider trying this little add-on the next time you cook a steak, and hope you enjoy the extra pop of flavor it adds!

    Ingredients
    • 4 Tablespoons butter , room temperature
    • 2 Tablespoons flat leaf parsley , finely chopped

    2. Remove steaks from refrigerator approximately 30 minutes before grilling (to take the chill off).  Grill meat until it reaches desired doneness.  When done, remove steaks from grill; transfer to a serving platter. 

    3. Immediately top each steak with a scoop (or rounded Tablespoon) of the herb butter.  Let meat rest for a few minutes so that internal juices redistribute throughout meat. The butter should begin to melt over the top of the hot steaks during this time.  Serve, and enjoy!
