Lemon Garlic Cauliflower Rice is a tasty, low calorie vegetable side dish that goes well with chicken, beef and pork, and is simple to make!
Melt butter in a large skillet on LOW heat. Add minced garlic; cook about 45 seconds to 1 minute. Stir often, to not burn garlic, or it becomes bitter.
Add cauliflower rice to the skillet. Mix with butter/garlic until combined. Cook on Medium-Low,, stirring often, for 2 minutes. NOTE: If using frozen cauliflower rice, make sure it's fully thawed/drained before adding to skillet.
Stir chicken broth, seasonings (parsley and Italian seasoning), and lemon zest into the cauliflower rice. Add lemon juice; stir until combined with other ingredients.
Cook on Medium-Low heat for 1-2 minutes, stirring often, until the cauliflower rice is heated through.
Transfer lemon garlic cauliflower rice to serving bowl; garnish with fresh parsley, if desired. Enjoy.
