Have leftover eggnog? Make Baked Eggnog French Toast, a delicious warm breakfast treat, with a buttery brown sugar and cinnamon topping.
Lightly grease bottom and sides of a 2 quart baking dish. Cut French bread into bite sized cubes; place cubes into prepared dish.
In bowl, whisk eggnog, eggs, nutmeg, and vanilla until combined. Pour over bread cubes. Lightly press down (or gently stir) so bread has contact with liquid and is moistened. Cover dish tightly with plastic wrap; refrigerate overnight. In morning, remove wrap; let rest at room temp. while making topping.
Preheat oven to 350°F. while making topping.
Place flour, brown sugar, granulated sugar, cinnamon and nutmeg in medium bowl. Use a whisk to combine, making sure to break up any brown sugar clumps. Add melted butter; stir well, to incorporate it. Topping should now resemble "wet sand". Pinch off small crumbles; evenly distribute it over bread cubes.
Bake at 350°F. for approx. 35 minutes. When done, the top should be golden brown and "set" in the middle. Remove from oven; let cool 5-7 minutes before slicing,
Cut into 6 portions; transfer onto plates and serve warm. If desired, sift powdered sugar on each piece, drizzle with maple syrup. Enjoy! NOTE: Leftovers can be covered and stored in fridge for 2-3 days. They can also be easily reheated in a microwave.
