Cranberry Pecan Curried Rice is a flavorful dish that's easy to make! Recipe yields 4 servings and is a delicious side dish for many entrees.
Bring chicken broth and butter to a boil in a large saucepan over Medium heat. Add rice; stir to combine. Bring liquid back to a boil again, then reduce heat to a low simmer; cover pan. Cook rice (covered) for about 20 minutes. When done, remove pan from heat.
While rice cooks, heat oil on Medium heat in a separate large saucepan on Medium. Once hot, add onions; stir to combine. Cook onions, stirring often, for 5-6 minutes. Onions should become tender, translucent, and very lightly browned.
Stir pecans and garlic into onion mixture; cook 2 minutes on Medium heat, stirring often to not burn the garlic. Add curry powder, ginger, salt and pepper to pan; stir to combine.
Once rice is done cooking, remove pan from heat. Use a fork to fluff the rice, then stir hot rice into the onion mixture. Add dried cranberries and chopped, fresh parsley to hot rice; stir to fully combine all ingredients.
Transfer rice to serving dish. Top with more parsley, if desired. Serve and enjoy!
