Make delicious sugared curry ginger pecans, baked in a buttery glaze, in only 20 minutes! This appetizer or snack is not too sweet, and not too spicy!
Preheat oven to 350° F. Melt butter and pour it into a medium sized bowl. Add the raw pecan halves, and toss, until pecans are coated.
In a separate small bowl, stir together granulated sugar, curry powder, ground ginger, cayenne pepper and salt, until blended. Add this mixture to the buttered pecans, and stir gently, to ensure all the nuts are fully covered with glaze.
NOTE: The finished pecans are very mild in flavor, so taste one now, and if you wish to add additional curry powder, cayenne or ground ginger, do so to suit YOUR taste.
Place a sheet of aluminum foil on a 13 x 9 inch baking sheet, and spray it lightly with non-stick baking spray. Spread the sugared curry ginger pecans out in a single layer, leaving a bit of space between each piece. Place the pan in a preheated 350° F. oven, on the middle rack. Bake pecans for 10 minutes. When done, remove baking sheet (with pecans still on it), and place it on a wire rack to cool. Once they have cooled completely, remove pecans from foil, and transfer them to a serving plate or bowl, and serve!
