Cook veggies at 370°F. for about 4 minutes; open the air fryer- use a spatula to flip vegetables to the other side. Spread veggies out in single layer again. Cook for 3-5 minutes more (checking them occasionally) until veggies are fork-tender and lightly browned.
When done, transfer veggies from the basket into a serving bowl. Immediately sprinkle fresh grated Parmesan cheese on top. Add chopped fresh parsley, if using (optional). Serve and enjoy!
