Last year we were fortunate enough to get a new Traeger pellet grill. I had scrimped and saved for a couple years, and was able to buy it for my husband’s birthday and Father’s Day gift. It was also a blogging gift to me, because a smoker grill provides a new way to cook and create delicious foods!

We’ve Already Used The Traeger For Several Recipes!

I’ve been fortunate to have already gotten used to this form of grilling… user a smoker / pellet grill! Some of the foods we’ve already grilled using our Traeger include roasted whole chicken, turkey breast, pork loin roast, and rosemary wine pork chops.

We’ve also used this smoker to make asparagus, Caribbean jerk pork chops, and an amazing berry cobbler. I’ve also got a few more recipes to post, just as soon as I can get to them!

Since I was inspired by how good the dessert berry cobbler was, it excited me to find a recipe online for a lava cake, and realized I could adapt it for our grill! Traeger grilled chocolate lava cake for the WIN! Here’s how:

Prepare Traeger Grill

Make sure hopper is loaded with pellets (we used Cherry, but it won’t really matter what kind!). Turn to smoke setting, leave lid open, and let the fire get established and smoking. This usually takes 4-5 minutes.

Once fire is established and it’s really smoking, set the temperature gauge to 350° F.  Close the lid, and let the Traeger preheat until it reaches temperature (about 10-15 minutes). While the grill preheats, prepare the lava cake.

Make The Traeger Grilled Chocolate Lava Cake

Using a medium sized bowl, stir together 2 cups of self-rising flour, 1½ cups of granulated sugar and 3 Tablespoons of unsweetened cocoa powder. Add milk and vanilla extract and stir well, to make a nice, thick and smooth batter. Set aside.

Batter Is Now Added To Skillet

Melt butter in a 12″ ovenproof skillet or cast iron skillet on medium heat. Once the butter has melted, remove skillet from heat source, and spoon the batter over the top of the butter.

The batter will not fully cover the butter… no worries! This is what mine looked like after all the batter had been added. Try to spoon it evenly around the skillet. Do not stir.

Sprinkle With Cocoa Sugar Topping

Take the remaining 2 cups of granulated sugar and 1/2 cup of unsweetened cocoa powder, and stir together in a separate medium bowl. Once mixed, sprinkle all this mixture over the top of the batter and butter in skillet. This mixture should cover just about the entire surface of the chocolate lava cake.

Take Skillet Outside For Last Step (With Boiling Water)

For this last step, I would recommend you do this OUTSIDE, right by the grill. You will be using boiling hot water, and nobody wants to carry a huge skillet with boiling water through the house, right? Carefully and slowly pour 3 cups of boiling water over the surface of the chocolate lava cake. Do not stir.

Time To Cook The Traeger Grilled Chocolate Lava Cake!

Place the skillet onto a rack in the Traeger. Bake the lava cake at 350° for 30-35 minutes, with the lid closed. Check the cake at the 30 minute mark.

When done, the chocolate lava cake should be set on top in the middle.  Since there is some liquid chocolate “lava” inside, it will not feel solid all the way through. Just cook it until it looks and feels fairly “set”. Mine ended up taking 40 minutes to finish cooking, and I was satisfied with how it looked (and felt on top).

The photo below show the Traeger grilled chocolate lava cake, right after I brought it inside. Oh my goodness! It looked so good! Let the cake cool for 10-15 minutes until it is warm but not boiling hot. If you look closely at the photo, you can see in a crack in the lower third of the cake a glimpse of some “lava” inside. You can also see how the top is set.

Ready To Serve The Chocolate Lava Cake!

When it is ready to serve,  take a large spoon, and dip out the cake into small serving bowls. You should have enough for 10 portions! You will be amazed how much chocolate “lava” comes running (like a volcano) out of the cake.

Top each portion of Traeger grilled chocolate lava cake with a scoop of ice cream, and serve. You can see in the photo below, the cake AND the “lava” in the bowl. YUMMO! This cake tastes wonderful!

  • 2 cups self rising flour (see NOTES for substitute)
  • cups granulated white sugar

  • 2 cups granulated white sugar
  • 1/2 cup unsweetened cocoa powder
  • 3 cups boiling water
Instructions

  3. Melt butter in a 12" ovenproof skillet or cast iron skillet on medium heat. Once butter has melted, remove skillet from heat, and spoon the cake batter over the top of the butter. The batter will not fully cover the butter. Try to spoon it evenly around the skillet. Do not stir.

  4. In a medium bowl, stir remaining 2 cups of granulated sugar and 1/2 cup of unsweetened cocoa powder together. Once mixed, evenly sprinkle this mixture over the top of the batter and butter in skillet. It should cover the surface of the cake. Carefully and slowly pour 3 cups of boiling water over the surface of the chocolate lava cake. Do not stir. TIP: I recommend pouring the hot water into skillet OUTSIDE, next to grill.

  5. Place the skillet onto a rack in the Traeger. Bake the lava cake at 350° for 30-35 minutes, with the lid closed. Check the cake at the 30 minute mark. When done, the chocolate lava cake should be set on top in the middle.  Since there is some liquid chocolate "lava" inside, it will not feel solid all the way through. (I ended up cooking mine for 40 minutes-perfect!). When done, remove from grill and let it cool for 15 minutes until it is warm but not boiling hot.

  6. When ready to serve,  take a large spoon, and dip out the cake into small serving bowls. You should have enough for 10 portions! You will be amazed how much chocolate "lava" comes running (like a volcano) out of the cake. Top each portion with a scoop of vanilla ice cream, and serve. Enjoy!

TIP: Don't have self-rising flour? Do this: Sift 2 cups flour, 3 teaspoons baking powder, and 1 teaspoon salt together. Use this mixture to replace the self-rising flour called for in recipe.

Do you enjoy grilled pork chops? We sure do, and this recipe for rosemary wine pork chops is a real winner! Boneless pork chops marinate in a easy, simple sauce, and then are grilled on a traditional BBQ or a pellet smoker (we grilled them on our Traeger grill).

The recipe is so simple, but yields very tender and flavor-filled pork chops! For us, grilling is especially wonderful as the days get warmer and warmer. I don’t know about you, but we grill outside a LOT in late Spring and summer, to avoid getting our kitchen heated up. Here’s how to make this yummy dish!

Make The Marinade For The Rosemary Wine Pork Chops

The marinade for the pork chops is super simple to make!  In a small bowl, combine olive oil, red wine, chopped rosemary, salt and Montreal seasoning. Mix well with a whisk or fork, until all ingredients are fully combined.

NOTE: Measure out a few Tablespoons of the marinade into a separate container and reserve for later. You will use this reserved marinade to brush on the pork chops while they are cooking!

Trim as much fat off the pork chops as you can, and discard (discard the FAT, not the pork chops, ha ha!). Place the pork chops in a zip loc bag.

Marinate The Pork Chops

Pour the marinade for the rosemary wine pork chops into the plastic bag. Seal the bag, and then “smoosh” the bag around with your fingers to coat the pork chops on all sides with the marinade. Once the pork chops are fully coated in the marinade, place the bag into the refrigerator and let the meat marinate for 2 hours (minimum).

After the rosemary wine pork chops have finished marinating, remove the chops from the marinade. Discard the marinade in the bag (do not use it after being exposed to the raw pork). Grab the reserved marinade you set aside earlier. Now you are ready to put these tenderized, marinated pork chops on the bbq grill to cook!

Grilling The Rosemary Wine Pork Chops

Place the pork chops directly onto the grill grate. There is no need to “oil” the grill, because the pork marinade has olive oil in it, which will help to prevent the meat from sticking!

Using a Standard BBQ Grill (propane or briquettes)?

Prepare grill as you normally would. Once briquettes are ready, or grill has pre-heated, place the rosemary wine pork chops directly over heat on the grill grate. Grill, turning once (and occasionally basting with marinade), until pork reaches an internal temperature of 145-160°F. This will take approximately 25-20 minutes.

Using a Traeger or Other Smoker/Pellet Grill?

If using a Traeger grill (we were), follow the normal “start-up” process: let Traeger smoke then ignite (about 5 minutes). When the fire has ignited, set the temperature gauge to 450° F., and let the grill preheat for 10-15 minutes. Once preheated, cook the rosemary wine pork chops for 30 minutes, or until the pork reaches an internal temperature of 145-160° F. Baste the pork chops occasionally with the marinade while they cook.

A Real “Traegerpalooza”!

The evening we grilled these delicious pork chops, we cooked quite a few other dishes on our Traeger grill, including roasted turkey breast, hot dogs, and brat sausages (not pictured). I didn’t have to cook dinner for almost a week after this BBQ extravaganza, because we had so much great food to enjoy!

We also cooked Caribbean Jerk Pork Chops and Grilled Asparagus (with lemon and Parmesan), which are shown in the photo below by the rosemary wine pork chops (see arrow).

When they are done, remove the pork chops from the grill, and let them rest for 5 minutes to let the juices inside redistribute throughout the meat. Once you’ve done that, these delicious rosemary wine pork chops are ready to eat!

Are you looking for an EASY grilling recipe for bone-in pork chops? If so, then I hope you will continue reading! This recipe for Caribbean jerk pork chops is ridiculously simple to prepare, and the chops taste wonderful!

The prep time for these pork chops is only a couple minutes, then the chops are refrigerated for half an hour. After that, throw ’em on the grill or smoker, and enjoy the finished grilled pork chops. Anyone can make these flavorful pork chops, and I’m happy to show you just how very easy it is!

Marinate The Caribbean Jerk Pork Chops Before Cooking

This is the marinade that we use to make these delicious pork chops. I am not sponsored by this company, but just want to show you what we used. We bought this sauce at our local grocery store, and it is also available on Amazon.

Mix the marinade with pineapple juice in a small container. Place two large bone-in pork chops in a resealable bag or container and pour in the marinade and pineapple juice blend.

This is the Caribbean-inspired marinade I used for the pork chops.

Seal the bag or container and then “smoosh” the bag around to distribute the marinade sauce, to fully cover the chops with sauce.

Once the pork chops are coated in sauce, place the container or bag in the refrigerator for 30 minutes, so they can absorb lots of flavor!

The bone-in pork chops marinate in the refrigerator for at least 30 minutes before cooking.

When ready to grill the pork chops, remove them from the refrigerator. Discard the excess sauce that had the raw pork in it.

Pour additional “fresh” Caribbean jerk sauce (without the pineapple juice) in a small container, so you can baste the chops with it, while they cook on the grill.

Marinated Caribbean jerk pork chops (and extra sauce) are ready to put on the grill.

We Had Quite The Grilling “Traegerpalooza”!

The same evening we enjoyed these delicious Caribbean jerk pork chops, we also grilled other items alongside them on our Traeger grill.

In the photo below you can see we also had grilled asparagus, brats and hot dogs, tri-tip steaks, and another batch of boneless pork chops, made with a different sauce. We also roasted a whole turkey breast on the Traeger (not pictured). As you can see, the Caribbean jerk pork chops were in great company!

These are some of the foods we grilled along with the pork chops.

Directions For Cooking Caribbean Jerk Pork Chops On A Traeger Grill

If using a Traeger smoker grill to cook the pork chops, follow manufacturer instructions to get the fire ignited. Once ignited and smoking, set the temperature control to 450° F. Close the cover, and let the grill preheat for 10-15 minutes.

Once the grill is preheated and at temperature, place the marinated pork chops directly on the grill grate. Cook the Caribbean jerk pork chops for about 30 minutes, or until the internal temperature reaches between 145-160° F.

Continue to baste with sauce while cooking. It is not necessary to turn the chops, because of the indirect heat feature (convection) present on a Traeger grill. Remove the pork chops once done, and let them “rest” for a few minutes to let the juices redistribute inside the meat, before serving.

Cooking The Pork Chops On A Traditional BBQ?

If you will be cooking the Caribbean pork chops on a traditional BBQ, place the chops directly on the grill grate. Continue to baste with sauce while cooking, turning as necessary during the cooking time.

The cooking time might vary slightly due to cooking them over a direct flame, so be sure to check the internal temperature of the pork chops. They are safely “done” when they reach an internal temperature of 145-160° F. Remove the pork chops once done, and let them rest for a few minutes to let the juices redistribute inside the meat, before serving.

We grilled the pork chops on our Traeger grill, along with other items.

Here are the finished Traeger grilled Caribbean jerk pork chops! They are full of flavor, and are enhanced by the wood pellet smoker feature of the grill! We used mesquite wood pellets in our Traeger. NOTE: If cooking these on a traditional “over the flame” BBQ, the chops will be a lot browner and crispy on the outside.

The Caribbean jerk pork chops have come off the grill, and are ready to eat!

  2. Seal the bag or container and then "smoosh" the bag around to distribute marinade sauce, to fully cover chops with sauce. Once the chops are coated in sauce, place container or bag in refrigerator for 30 minutes, so they can absorb lots of flavor!

If Cooking On A Traeger Or Smoker Grill:
  1. If using a Traeger or smoker grill to cook the pork chops, follow manufacturer instructions to get the fire ignited. Once ignited and smoking, set the temperature control to 450° F. Close the cover, and let the grill preheat for 10-15 minutes. Once the grill is preheated and at temperature, place the marinated pork chops directly on the grill grate. Cook the Caribbean jerk pork chops for about 30 minutes, or until the internal temperature reaches 145-160° F. Continue to baste with sauce while cooking. It is not necessary to turn the chops. Remove the pork chops once done, and let them "rest" for a few minutes to let the juices redistribute inside the meat, before serving. Enjoy!

If Cooking On Traditional BBQ Grill
  1. Once fire (or briquettes are ready) place the chops directly on the grill grate. Continue to baste with sauce while cooking, turning as necessary during the cooking time. The cooking time might vary slightly, due to cooking them over a direct flame, so be sure to check the internal temperature of the pork chops. They are safely "done" when they reach an internal temperature of 145-160° F. Remove the pork chops once done, and let them rest for a few minutes to let the juices redistribute inside the meat, before serving. Enjoy!

Last summer we got a Traeger grill. I had saved and saved my money for a while, and purchased it for my husband’s birthday (and so I could use it for my blog, too!) We have enjoyed experimenting and learning how to grill and smoke meats, veggies and desserts on our grill!

A couple of weeks ago we had what we fondly call a “Traegerpalooza”! We cooked this Traeger roasted turkey breast, grilled asparagus with lemon and Parmesan, 2 types of pork chops, turkey sausages, tri-tip, and brats (sausages). It was so good (and I didn’t have to cook dinner for almost a week)! Ha Ha!

How To Make A Traeger Roasted Turkey Breast

The roasted turkey breast turned out fantastic, so I wanted to share what we did with you today! We started out with an almost 5 pound turkey breast (bone in). The first thing I did was to rinse the turkey, and then pat it dry with paper towels.

A whole turkey breast (bone-in) is rinsed, then patted dry before adding seasonings.

Make The Spice Rub Mix In Under 5 MInutes!

A dry rub spice mix was quickly mixed up.  It’s soooo easy to pull together, and I have used this same flavorful mix before on smoked pork loin roast , pork butt, and whole chickens that we have slow roasted on the Traeger.

The spice mix is made with brown sugar, paprika, garlic powder, onion powder, cayenne pepper, cumin, salt, pepper, and dry mustard. It is a fantastic spice rub, and you will have some leftover for your next grilling project, too! The turkey breast is generously sprinkled with the spice rub on all sides. I rubbed the spices into the turkey, and even rubbed some of the mix inside the turkey breast.

Cooking The Traeger Roasted Turkey Breast

Turn the Traeger to the SMOKE setting with the lid open. After about 4-5 minutes, you should see lots of smoke coming from the grill, meaning the pellets have ignited. Turn the temperature to 325° F and close the grill cover. Let the Traeger preheat for about 15 minutes. TIP: Prepare the spice rub and the turkey WHILE the Traeger is preheating, to save time!

Once the grill has preheated, place the seasoned turkey breast directly on the grill grate. Close the cover, and let the turkey breast cook for approximately 1 hour and 45 minutes. Cooking times will vary slightly because of varying weights of turkey breasts used. Check the internal temperature occasionally as it cooks, to ensure you don’t overcook or undercook the turkey breast.

How Will I Know When The Traeger Roasted Turkey Breast Is Done?

Continue to check the internal temperature using a probe inserted into the thickest part of the breast. When the turkey breast has reached an internal temperature of 165° F, pull it off the grill. Transfer the Traeger roasted turkey breast to a cutting board, and let it “rest” for about 15 minutes before slicing. This “resting time” helps the juices redistribute inside the meat.

Once the turkey breast has “rested”, it is ready to slice and eat! The turkey breast is juicy, and full of flavor, thanks in part to the dry rub spices, and the long smoking time! We LOVE having perfectly cooked slices of roasted turkey breast for quick dinners and sandwiches. It tastes so good! I froze half of the turkey breast to save for another time, too!

The roasted turkey is juicy, and slices well, which is perfect for sandwiches!

  • 4.5 pound turkey breast (approx,) , bone in, skin on
For Dry Rub Spice Mix (this will make MORE than you will use- enough for several uses)
  • 1/3 cup brown sugar

Do you enjoy fresh asparagus? We sure do, and look forward to it, especially in the spring, when fresh asparagus hits the grocery stores in all it’s glory! We enjoy pan-cooking or baking asparagus inside in our kitchen, but one of our favorite ways to prepare it is to grill it on a BBQ!

Last week we had what my husband and I call a “Traegerpalooza”, where we smoked/grilled lots of different meats on our Traeger grill. We cooked enough to provide our meals for almost a week! Another dish we made was this delicious grilled asparagus with lemon and Parmesan cheese! Asparagus is very easy to grill. Let me show you just how simple it is!

How To Make Grilled Asparagus

Before grilling the asparagus, you need to get it ready! Snap the “woody” ends of each asparagus spear off, at the bottom. It should easily snap off between your fingers. You can discard the end pieces.

Lightly drizzle the asparagus with olive oil, and then lightly season with salt and pepper. I also squeezed a tiny bit of fresh lemon juice over the asparagus. Mix this all together with your fingers until the asparagus spears are well coated. Now it is ready to grill. You will need your Traeger OR traditional BBQ preheated and ready to go!

Fresh asparagus is drizzled with lemon juice and olive oil, and seasoned before grilling.

I’m showing you a photo (below) of the items we smoked and grilled on our Traeger along with the grilled asparagus. We cooked two different recipes for pork chops, some brats and turkey sausages, tri-tip steaks, the asparagus, and a bone-in turkey breast (not in photo).

The grilled asparagus can be prepared this way on any kind of BBQ. When we grilled them on our Traeger, we went through all the normal preheating necessary, and then heated the grill to 450° F. to prepare the asparagus.

Cooking The Grilled Asparagus On The BBQ

The seasoned asparagus spears are placed directly on the grill grate in a single layer.  Cook the grilled asparagus for 4-5 minutes at 450° (high heat). Once done, the asparagus spears will be slightly tender and still slightly crisp after this time. If you want them a tiny bit softer, cook them just a tiny bit longer. Be sure to NOT overcook the asparagus!

On a Traeger grill, there is no need to turn the asparagus, because there is no direct flame underneath the grill grate. If making this on a traditional BBQ (with propane or briquettes), you will need to keep a close eye on the veggies. Turn them once during the cooking. Once done, remove the grilled asparagus to a serving plate.

To Serve The Grilled Asparagus

Immediately after transferring the hot grilled asparagus to a serving plate, garnish with shredded Parmesan cheese, a squeeze of fresh lemon juice and lemon zest.

The heat from the asparagus should slightly melt the Parmesan cheese you have added to the top of the dish. A little lemon juice and zest help to give the finished grilled asparagus a nice fresh “pop” of extra flavor! Serve immediately, and enjoy this simple vegetable dish!

My husband and I have enjoyed “getting to know” the Traeger grill he got for his birthday this past summer. We’ve made several items on it, including a smoked Pork Loin Roast, and a delicious dessert of Berry Cobbler. Both recipes were both amazing!

One of our favorite things we make often is Traeger roasted chicken. Whole chickens are covered with a dry spice rub mix, then the chickens roast, quite happily I might add, in the Traeger grill for about an hour, until done! It’s so easy to make chicken this way!

Making The Spice Rub For Traeger Roasted Chicken

The dry rub mix for Traeger roasted chicken is ridiculously easy to prepare. The spices are combined in a small bowl. Spices are mixed well, until all spices are fully incorporated. The spice rub recipe makes approximately 2 cups. You will only have to use a small PART of this to coat one chicken.

My recommendation is to go ahead and make up the whole batch, as written. After seasoning chicken(s), place remaining dry rub mix into an airtight bottle, and store in pantry. The spices will keep for at least 6 months, so you will have it handy, to use over and over! Guess what? This spice rub tastes fantastic on PORK, too!

Applying Spice Rub On The Traeger Roasted Chicken

Rinse and pat dry (with a paper towel) one or more whole chickens. Remove any giblets that may be inside the chicken cavity, and discard.

Cover the entire chicken generously with dry rub mixture, patting it into chicken to adhere. Sprinkle some into the cavity of the chicken, also. NOTE: You will definitely have some of the spice rub left over, which can be used for other recipes, or to coat about 4 more chickens).

Prepare Chicken To Roast Evenly

Tuck the tips of the chicken wings under the chicken, to hold in place. Tie the front legs of chicken together with cooking twine. NOTE: I didn’t have cooking twine available, so used some of my raffia, from crafting, to tie legs together. It worked perfectly!

The reason it is a good idea to tuck wings under chicken, and tie legs together, is that it helps the chicken cook more evenly. You can see in the photo below how the legs were tied. As always, when working with fresh poultry, wash your hands thoroughly with soap and water after handling chicken.

How To Roast Chicken On A Traeger Grill

When ready to begin, start the Traeger grill on SMOKE setting, with the lid OPEN, until the fire has ignited and is smoking (about 4-5 minutes). Set the temperature gauge to 375°. Close the lid. Let the Traeger preheat for 10-15 minutes. Add a small pan of apple juice (or cider) to the top rack of the grill. This helps to keep some flavorful steam circulating while roasting the chicken.

After grill has preheated, place the chicken directly on the grill grate.  Cook at 375°F (with the lid closed) for approximately 60 minutes, or until the internal temperature reaches 165°F.

How To Test For Correct Temperature Of Traeger Roasted Chicken

To test for internal temperature, insert the temperature probe into the chicken in between the leg and the thigh joint.  You will need to also check the internal temperature of a chicken breast, to ensure it also reaches an internal temp of 165°F once done. NOTE: If it looks like the chicken is starting to get blackened on top when near the end of the roasting time, lightly cover the chicken with aluminum foil, and continue cooking until done.

Remember, due to varying weights of chicken used, fluctuating temps on your grill, and how chilled the chicken is before adding it to the grill, your cooking time may be shorter or longer.

Okay, The Chicken Is Ready, Now What?

Once Traeger roasted chicken has reached an internal temp of 165°, remove them from the grill and place on cutting board or tray with rimmed edges (to catch any juices). Untie the chicken legs by slicing through and removing the cooking twine.

Let the chicken rest for about 10-15 minutes, before attempting to slice. This will allow the juices inside the meat time to redistribute throughout the chicken. Trust me, you WANT juicy chicken!

After your Traeger roasted chicken has rested for 10-15 minutes, it is time to slice, and serve!

Add a small aluminum pan of apple juice (or cider) to the top rack of grill (this helps keep flavorful steam circulating while roasting). After grill has preheated, place chicken directly on the grill grate.  Cook at 375°F (with lid closed) for about 60 minutes, or until internal temperature reaches 165°F.

  2. To test for internal temperature, insert the temperature probe into the chicken in between the leg and the thigh joint.  You will need to also check the internal temperature of a chicken breast, to ensure it also has reached 165° temp. NOTE: If it looks like chicken is starting to blacken on top near the end of roasting time, lightly cover chicken with aluminum foil; continue cooking until done.

  3. Once chicken has reached an internal temp of 165°, remove from grill and place on cutting board or tray with rimmed edges (to catch any juices). Untie chicken legs by slicing through and removing cooking twine. Let chicken rest for 15 minutes (to let juices inside redistribute throughout meat). Slice and serve!

Someone Got A TRAEGER!

My husband has a NEW Traeger grill that he received for his birthday and Father’s Day (what a great combo gift) this past June. We have had fun trying new recipes for chicken, sausages, pork, steak, (and even dessert) ever since!

We were anxious to try pulled pork (as well as a “bazillion” other recipes), so I searched for a spice rub recipe online that sounded like it would be really good. My husband bought a 3 pound pork loin roast and we decided to cook it on our grill, seasoned with some of the spice rub I found online (which is perfect for pork or chicken).

We used the cookbook that came with the grill purchase to determine how long the roast would take to smoke, then slow roast. We crossed our fingers and followed the process exactly, and the results were wonderful! YAY- SUCCESS on a smoked pork loin roast!

Here’s How We Made This Delicious Roast On Our Traeger Grill

Start by making the dry spice rub. EASY! Place the dry rub spices in a medium sized bowl. Mix well, to fully combine ingredients. I cut the recipe in half. The flavor-filled dry rub recipe made enough for the pork roast, PLUS a couple of extra uses. We’ve  also used the spice rub on a whole chicken, and STILL have some left over (stored in an airtight container) for the next pork roast or chicken we grill.

Cover all sides of the pork roast with the dry spice rub, patting it onto the surface of the meat. The slight moisture of the meat will help the spices stick!  When done, set seasoned roast aside until ready to put it in the smoker.

Ready To Make A Traeger Smoked Pork Loin Roast?

When ready to begin, turn the Traeger grill to the SMOKE setting. Let it fire up for 4-5 minutes, with the lid OPEN. Once grill is smoking, turn the temperature gauge to 225° F. Close the lid on the grill and let it preheat for 10 to 15 minutes. It doesn’t really matter, but in case you’re curious… we used Mesquite wood pellets for our Traeger smoked pork loin.

Once the grill/smoker is preheated, place an aluminum pan with 2 cups of apple juice into a corner (this will help keep some nice moisture in the grill during the long smoking process). Another option for this is to use a spray bottle and spritz the apple juice onto the roast about once an hour, if desired. Place the seasoned pork loin roast on the grill, FAT SIDE UP. Insert the temperature probe into the meat. Roast the pork for 3 hours, with the lid closed.

After pork has smoked/roasted for 3 hours, transfer the meat into an aluminum pan, and place back onto grill (with temperature probe still attached). Continue to cook the smoked pork loin roast for 5-6 hours, or until the temperature in the thickest part of the meat (not touching any bones) reaches an internal temperature of 190° F. The long cooking time ensures the meat will be very tender!

Almost Time to EAT!

This is what the pork loin roast looked like, once it was done. Remove roast from grill. Cover the pan loosely with aluminum foil, and let the meat rest for approximately 30 minutes. Pour any accumulated juices in the pan into a separate container (or gravy separator). Transfer the Traeger smoked pork loin roast to a cutting board.

While the pork is still quite hot, slice it OR pull the pork into chunks (or shred with two forks). Be sure to discard any fat or bones (nobody wants a big bite of THAT!). You can add additional seasoning rub (and a little of the reserved juices) to the meat at this point OR mix meat with a favorite BBQ sauce. At that point, it’s ready to gobble up, and we cut off a portion of the Traeger smoked pork loin roast to eat just as it was (with it’s incredible smoked flavor). Yum.

After that, we took the remaining half of the roast, and pulled it into shreds. To the shredded pork we added a delicious a sweet n’ spicy BBQ sauce (Sweet Baby Ray’s), and mixed it until everything was covered! You can still see part of the pink “smoke” ring in the meat before I mixed in the sauce!

Since we decided to make BBQ pulled pork sandwiches, the next thing I did was to lightly toast hamburger buns, piled each one high with shredded BBQ smoked pork, covered the pork with homemade coleslaw (for added crunch), and enjoyed it for dinner!

Oh boy… this was a fantastic BBQ Traeger smoked pork loin sandwich! YUM! We enjoyed the leftovers for days!

Ingredients
Dry Rub Spice Mix (makes about 2 cups total- you need 1/3 cup for this roast. See NOTES below):
  • 1/3 cup dark brown sugar
  • 1/2 cup smoked paprika
  • 1/4 cup garlic powder
  • 1/4 cup salt
  • 2 Tablespoons black pepper
  • 2 Tablespoons chili powder
  • 2 Tablespoons chipotle chili pepper (optional)
  • 2 Tablespoons onion powder
  • 1 Tablespoon cayenne pepper
  • 1 Tablespoon ground cumin
  • 1 Tablespoon dry mustard
For pork roast:
  • 3 pounds pork loin roast
  • 2 cups apple juice
Instructions
  1. Make the dry spice rub by placing spices in a medium sized bowl. Mix well, to fully combine ingredients. Cover roast with about 1/3 cup of the dry spice rub, patting  it onto the surface of the meat, making sure to cover all sides. *You will have leftover spice rub- SEE RECIPE NOTES BELOW)*. When done, set roast aside until ready for smoker.

  2. When ready to begin, turn the Traeger grill to the SMOKE setting. Let it fire up for 4-5 minutes, with the lid OPEN. Once grill is smoking, turn the temperature gauge to 225° F. Close the lid on the grill and let it preheat for 10 to 15 minutes. We used mesquite pellets.

You can add additional seasoning rub (and a little of the reserved juices) to the meat at this point OR a favorite BBQ sauce (if using pork to make sandwiches). Serve sliced or pulled, with or without and enjoy the delicious smoky flavor!

Recipe Notes

NOTE: As written, dry rub recipe makes almost 2 cups. I cut the recipe for the dry rub in half. The quantities are easy to cut in half (except for the 1/3 cup of dark brown sugar. If cutting brown sugar in half, use 2 Tablespoons PLUS 2 teaspoons brown sugar). If halved, you'll end up with about 1 cup of spice rub, which is enough for 3 pork roasts or chickens (about 3 pounds each). Each roast uses about 1/3 cup of the rub to cover. Store leftover spice mix in airtight sealed container.

Who wants a serving of berry cobbler, made Traeger grill style? That’s right! Did you know you can make a scrumptious fruit cobbler on a BBQ? Guess what? It tastes GREAT!

My husband recently received a new Traeger smoker grill for a combination birthday/Father’s Day present. I had been saving my money for a long time to buy him one as a special surprise (he’d wanted one for almost a year since he saw a demo), and boy, was he excited when he saw what I asked him to help me unload from the back of our truck!

Now that we had the grill, we had to figure out how to use it – DUH! (our first smoker). Certainly, we were used to using our Weber charcoal grill (direct heat). We also knew a Traeger grill could also double as an oven (due to using indirect heat), so we set about researching various recipes to try.

Experimenting With Our New Traeger Grill

Our first attempt turned out wonderful as we smoked and grilled chicken Italian sausages, a rib eye steak, and several chicken breasts.  For our second go around with the Traeger, we smoked a pork loin roast (made some tasty BBQ pork sandwiches) and a whole chicken.

We then finished the day off by cooking a delicious triple berry cobbler for dessert ON THE GRILL. **Head implodes**. Who knew you could do that? We sure didn’t… until we bought this grill (see that big smile on my hubby’s face when I surprised him with it?).

The berry cobbler we finished off the grilling session with is incredibly EASY to make… and delicious! I tweaked a rhubarb cobbler recipe I found on their app and adapted it for triple berries!

Berry Cobbler For The Traeger Grill OR In The Oven!

This recipe was specifically written for cooking the cobbler on a Traeger grill, BUT… it can just as easily be made in your oven… honest! Directions for baking it in the oven are included in the printable recipe below. I love the idea of being able to “bake” something on a hot summer’s day without heating up the kitchen, if I’m being honest. This has opened up new experimental cooking adventures for me, to be sure!

Here’s How To Make Berry Cobbler Traeger Style!

Combine frozen blackberries, blueberries and raspberries in a large mixing bowl. The recipe calls for mixed berries (I ended up using 3 full cups of frozen unsweetened mixed berries, straight out of a Richland frozen combo bag from Costco!). The frozen berries are then mixed with brown sugar, lemon juice, lemon zest, vanilla and a little pinch of salt.

After the berries were coated well, I placed them in a 10″ cast iron skillet (you can also use an 8×8 aluminum pan for grilling) or an 8×8 baking dish (if baking in oven). I let them sit in the skillet and thaw while I was making the cobbler topping. Any accumulated juices from the thawing fruit stayed in the skillet.

Make The Topping For The Cobbler

The berry cobbler topping is made by mixing flour, sugar, baking powder and salt in a medium bowl. COLD butter is cut into the flour with a pastry blender (or a couple forks) until the butter is the size of peas. Once mixed, sour cream is gently stirred into the mixture only until the dough begins to come together.

Dough is made for topping the berry cobbler.

The dough is then pinched into small pieces and placed all over the top of the fruit for the cobbler.

Dough is pinched off and covers the entire surface of the fruit for cobbler.

Granulated sugar is lightly sprinkled on top of the cobbler dough, then the berry cobbler is ready to be cooked on the smoker or in the oven..

Instructions For Baking In OVEN

If planning to bake in oven, preheat oven to 350°, then bake for 30-35 minutes or until topping is golden brown, and juices are bubbling around the edges. If you are using a Traeger grill, follow instructions below.

Instructions For Cooking On Traeger Grill Or Other Smoker

The Traeger grill is started on the “Smoke” setting with the lid open for 4-5 minutes, or until the fire has been established and grill is smoking. Turn temperature setting to 350° and preheat the grill for 10-15 minutes with the lid closed until temperature has been reached.

Place cast iron skillet (or aluminum pan) directly onto the grill grate. Close lid, and cook the cobbler for 35 minutes at 350° (may take just a few minutes longer if you want the topping to be more golden brown in color).  Cook until the dough topping is golden brown, and the juices are bubbling up all around the edges of the cobbler.

Once done, carefully remove skillet from grill (remember the pan is very HOT).  Let cobbler cool down for a few minutes, then scoop it up and serve. That’s how you make this scrumptious berry cobbler Traeger grill style!

If Using Traeger Grill:
  1. Start Traeger grill on the "Smoke" setting with the lid open for 4-5 minutes, or until the fire has been established and grill begins smoking. Turn temperature setting to 350° and preheat the grill for 10-15 minutes with the lid closed until temperature has been reached.  Place cast iron skillet (or aluminum pan) directly onto the grill grate. Close lid, and cook the cobbler for 35 minutes at 350° (may take just a few minutes longer if you want the topping to be more golden brown in color). Cook until the dough topping is golden brown, and the juices are bubbling up around the edges of the cobbler.

  2. Once cobbler is done, carefully remove skillet from grill or oven (remember the cast iron skillet will be very HOT). Let cobbler cool down for a few minutes, then scoop it up and serve warm, with a scoop of vanilla ice cream! ENJOY!
