Last year my husband and I went out for breakfast for the first time in months. We went to a favorite local restaurant that had just begun offering breakfast and I was intrigued by a French Toast recipe that was on the menu.

The French toast had an Irish whiskey batter and a crunchy cereal topping, and they offered Irish whisky syrup to top it with, if desired. Well, I ordered the maple syrup instead and loved this strange new twist on French toast (see picture below).

I came home after enjoying this meal and decided to try and make it as a “family-friendly” breakfast months later. This recipe for Crunchy air Fryer French Toast is the result.

My biggest question was how to get that crunchy topping… and once I figured it out, I make some for myself and my husband. It tasted GREAT! So, here’s my version of how to make Crunchy Air Fryer French Toast (without the whiskey!).

The inspiration for this recipe is shown from the restaurant where I ordered it.

Prepare The Challah Bread

I use challah bread to make this recipe, but you can use French bread, Brioche or Texas Toast if desired. Slice FOUR 1″ thick slices from the loaf.

This recipe (as written below) will require 4 one-inch slices of bread, which will be enough for two servings (two slices per serving).

Challah bread can easily be found in most grocery stores, however if you are interested in making your own, check out my recipe for classic challah bread.

Once you cut the bread into slices, set the four pieces aside while you make the egg batter.

Make The Egg Batter

Place two large eggs, milk, ground cinnamon and vanilla extract in a medium-sized bowl. Make sure the bowl is large or wide enough to lay a piece of the challah bread in it flat.

Use a whisk or a fork to fully combine these four ingredients into a wet batter. You may find the cinnamon doesn’t fully incorporate. Simply keep it mixed in as you dredge the bread in it (later).

Once the wet batter is made, set it aside while you make the crunchy topping for the French toast.

Prepare The Crunchy Topping

The easiest way to make the topping is to place 1½ cups of Raisin Bran Crunch (REMOVE THE RAISINS) into a food processor and pulse it until you are left with much smaller flakes.

I discovered how the crunch from this type of cereal kept its crunch even after cooking and that is why I used it. NOTE: There may be other cereals that hold a crunch as well, but this is the one I will consistently use.

If you don’t have access to a food processor, place the cereal flakes in a large plastic storage bag. Seal the bag, then lightly pound on it with a rolling pin or meat mallet until you have “pounded” the flakes manually into much smaller pieces.

Coating The French Toast Slices

Place the two bowls (one with egg batter on the left and the other one with the crunch topping) on your kitchen counter side by side. This will be your French toast “dipping” station!

Using one slice of challah bread at a time, place it into the egg batter. Once the bottom side is coated, carefully flip the bread over to cover the other side with the egg batter.

Gently press the bread into the batter, to ensure it is fully covered. Lift the bread up and let any excess batter drip back down into the bowl.

Immediately place the batter-coated bread into the crunchy topping and repeat the process. Cover one side of the bread, then turn and cover the other side with the crunchy topping.

NOTE: The actual size/thickness of the bread you choose to use “may” require a bit more egg batter than called for. This has never been the case for me, but since there are so many different sizes of bread available nowadays, I add this as a tip!

Repeat this process until all slices are covered on both sides with batter and the topping. I find it helpful to lay each piece (once covered) on a piece of parchment paper or foil while coating the other slices.

Air Fry The French Toast

Preheat your air fryer as the manufacturer suggests. Place the four slices of French toast in the air fryer basket, making sure to leave a bit of space between each slice (for better hot air circulation).

Cook the French toast at 370°F. for 5 minutes, then check it. The French toast (once done) should be lightly browned on top, cooked through, and should also be very crispy on the outside.

Serve The Crunchy Air Fryer French Toast

Use a spatula to transfer the crunchy air fryer French toast out of the air fryer and onto serving plates. Serve immediately while the French toast is hot.

Top the French toast with your favorite toppings such as butter, maple syrup, powdered sugar, fruit, etc. Use whatever you would normally enjoy on your French toast!

All that is left to do is grab a fork and dig into this delicious breakfast treat! The topping is crispy and crunch, yet the inside is gloriously soft!

I am confident you and those you love are going to enjoy this yummy breakfast! For us, it is an occasional breakfast treat, not an “all the time” treat.

The recipe can be doubled or tripled to suit your needs, but you will need to prepare it in batches, so the air fryer basket isn’t overcrowded.

Ingredients
  • 4 slices Challah bread slices (each 1" thick)

  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

    Instructions
    1. Slice FOUR 1" thick slices of challah bread. Set slices aside.

    2. Put eggs, milk, cinnamon and vanilla in a shallow bowl (large/wide enough to lay a bread slice in it flat. Use whisk or fork to mix into a wet batter. Set aside.

    3. Put Raisin Bran Crunch (REMOVE RAISINS) in a food processor; pulse until they become much smaller flakes. No food processor? Put cereal in a large plastic storage bag. Seal bag, lightly pound cereal with rolling pin or meat mallet until flakes are crushed into smaller pieces.

    4. Place bowls (egg batter on the left/crunchy topping on the right) on kitchen counter, side by side.

    5. Place 1 bread slice into egg batter. Once bottom side is coated, flip bread over, coat other side. Gently press bread into the batter, to ensure it's fully covered. Lift bread up; let excess batter drip down into the bowl. Immediately place bread into the crunchy topping Cover one side of the bread; flip and cover other side with topping. Repeat until all slices are covered (both sides) with batter and topping. Lay slices on parchment paper (or wax paper) while coating other slices.

    6. Preheat air fryer to 370℉. Lay bread slices in the inner basket in single layer, leaving space in between each slice (for best air circulation). Cook at 370°F. for 5 minutes. Once done (5-6 minutes) the French toast should be lightly browned on top, cooked through, and crispy on the outside.

    7. Use a spatula to transfer French Toast out of the air fryer onto serving plates. Serve immediately, garnished with favorite toppings (butter, syrup, powdered sugar, fruit, etc.). Enjoy!

    NOTE: The size/thickness of the bread you use "may" require more egg batter than called for, because there are so many different sizes of bread available nowadays!

    Air Fryer Cheese Enchiladas

    Do you like enchiladas? I sure do, and today I want to share how easy they are to make in an air fryer! I’ve been eating AND MAKING enchiladas for many, many years, but recently began using my air fryer to make them when it’s really hot and I don’t want to turn on our oven.

    Using an air fryer to make delicious cheese enchiladas is simple. Enchiladas are easily stuffed with cheese, onions and sauce, etc., then covered in more sauce and into the air fryer they go!

    The results are amazing, so I hope you try making them this way and see what I’m talking about! Here’s how to make air fryer cheese enchiladas.

    Prepare The Corn Tortillas

    Corn tortillas can crack a bit at times if you simply roll them around a meat filling. There is a fairly quick and easy solution to ensure the tortillas for the enchiladas are very pliable.

    Heat 2 Tablespoons of vegetable oil in a small skillet on medium heat until it is very hot but not smoking. Carefully place one tortilla into the hot oil.

    Very quickly flip the tortilla to the other side and then remove it from the hot oil onto paper towels to absorb excess oil. Use tongs to carefully remove the tortilla.

    NOTE: Do not fry the tortilla… simply let it get coated on both sides with the hot oil and then remove it!

    A corn tortilla is quickly heated in hot oil in a small skillet.

    Continue until all the tortillas have been slightly heated in the oil. Stack them, then pat each one dry before adding the cheese filling.

    Tortillas are then blotted dry using paper towels.

    Prepare The Cooking Dish

    Find an ovenproof baking dish that will fit in the basket of your model of air fryer. The glass baking dish I use fit perfectly in the basket of my Cosori air fryer.

    Spread ¼ cup of the red enchilada sauce you are using on the bottom of the baking dish and spread until the bottom of the dish is fully covered. Once that is done, you are ready to fill the enchiladas.

    TIP: If you don’t have any store-bought red enchilada sauce you can make your own using my recipe for Easy Homemade Enchilada Sauce (it’s easy and really GOOD).

    A small amount of enchilada sauce is spread on the bottom of the baking dish.

    Fill The Tortillas

    Fill one tortilla at a time, evenly filling each one with ¼ of the grated cheddar cheese down the middle of the tortilla.

    Sprinkle ¼ of the chopped onions on top of the cheese, then spoon a little bit of the remaining enchilada sauce in a line on top of the cheese and onions.

    TIP: Reserve a small amount of chopped onions and cheese to sprinkle on top of the enchiladas before you cook them!

    Each tortilla is filled with cheese, onions and sauce before rolling.

    Roll one side of the tortilla up and over the filling fairly tightly. Place the enchilada SEAM SIDE DOWN on top of the enchilada sauce in the baking dish.

    Top Enchiladas With Onions And Cheese

    Pour the rest of the enchilada sauce evenly over the tortillas, fully covering the tortillas. Sprinkle the enchiladas with the small amount of reserved onions.

    Evenly divide the reserved grated cheddar cheese on top of the enchiladas. Now the air fryer cheese enchiladas are ready to cook!

    NOTE: If your air fryer has a “preheat” function, you can preheat it to 350°F. before filling the enchiladas, in order to save time.

    Cook The Air Fryer Cheese Enchiladas

    Air fry the cheese enchiladas for 7-8 minutes at 350°F (check on them at the 7-minute mark). When they’re done, the sauce should be bubbling around the edges of the dish, and the cheese should be fully melted.

    Sauce is bubbly and cheese is melted on the enchiladas after cooking.

    Carefully remove the dish out of the air fryer basket using hot pads (it’s HOT). Let the air fryer cheese enchiladas cool for a minute to let the cheese cool slightly before they are served.

    Optional Garnish For Serving

    If you want, garnish the enchiladas with fresh cilantro leaves, guacamole, and/or dollops of sour cream for more color and flavor. This is optional, but you can add those if desired.

    Use a spatula to remove the enchiladas one at a time out of the baking dish and onto plates for serving. These enchiladas are cheesy good!

    If you have any leftover, cover the dish well and store it in the refrigerator. The enchiladas can easily be reheated in a microwave for another meal.

    Air Fryer Cheese Enchiladas can be garnished with cilantro and/or sour cream.

      Today I want to share a yummy recipe for Air Fryer Zucchini Bites (for two). When it’s hot outside and our garden is producing lots of zucchini, I’m always looking for new ways to cook them for my husband and myself.

      When I photographed this recipe, it was close to100°F. outside… and it was plain old HOT! That day was definitely time to use an alternate method of cooking to stay cool!

      I tend to use my air fryer, crockpot or Instant Pot a lot during the overly hot days of summer. It’s wonderful, because it’s a simple way to not heat up our kitchen and still get meals on the table! This recipe is perfect for a quick side dish, and the best part is it can really be enjoyed any time!

      I found the recipe online and made a few little tweaks to suit our needs (and tastebuds), and it’s a keeper! I’m sure you will enjoy this easy veggie dish. Here’s how to make air Fryer Zucchini Bites (for two):

      Make A Crumb Topping For The Zucchini

      Measure panko breadcrumbs, finely grated Parmesan cheese, all-purpose flour, salt, pepper, onion powder, garlic powder and a tiny pinch of red pepper flakes into a small bowl.

      Stir until these topping ingredients for the zucchini are combined. NOTE: The red pepper flakes are optional, so if you don’t want to use them, just leave them out! 

      Panko breadcrumbs, flour, Parmesan cheese and spices are combined in bowl.This mixture is the panko seasoning to use on the zucchini pieces.

      Prepare The Zucchini

      To make this recipe for two people (as written), you will need two small to medium zucchinis. I was fortunate to be able to grow these (shown below) in our little backyard raised bed garden, so I was thrilled to be able to use and photograph them for this blog post.

      Slice each zucchini in half lengthwise, then slice each piece in half (lengthwise) again. You should end up with 4 long zucchini quarters for each zucchini (shown at the top of the photo below).

      Lay the zucchini slices cut side down and slice each quarter long piece into ¾” pieces (shown at the bottom of the photo below).

      Each zucchini is sliced lengthwise, then again, then cut into bite-sized pieces.

      Coat And Season The Zucchini

      Drizzle olive oil over the zucchini pieces and then stir or toss the zucchini until all pieces have an olive oil coating on them. It’s important for the zucchini to be covered with the oil, so the panko breadcrumb topping will have something to adhere to.

      Olive oil is drizzled over the zucchini, then tossed to combine and coat the veggies.

      Pour the seasoned panko breadcrumb topping over the oil-covered zucchini. Gently toss until all the zucchini bites have been lightly covered with the topping.

      Cook The Air Fryer Zucchini Bites

      Preheat your air fryer for 5 minutes at 400°F. Once preheated, place the coated zucchini bites in the basket in an even, single layer. There is no need to spray the basket, because all the zucchini pieces have an olive oil coating, so they shouldn’t stick!

      Cooking the zucchini bites in a single layer allows the zucchini to cook more efficiently as the hot air can circulate better. NOTE: If you are doubling or tripling this recipe, you may need to cook the zucchini in batches (keeping previous batches warm in the oven).

      Panko-coated zucchini bites are placed in air fryer basket in a single layer for cooking.

      Cook the zucchini bites at 400°F. for 7-9 minutes. Shake or rotate the zucchini a couple times during the cooking time for even cooking. Do this by removing the basket and gently flipping them over, using a spatula.

      Keep An Eye On the Zucchini Bites

      Keep an eye on the zucchini. Check them around the 6-minute mark for tenderness, so you don’t overcook them (there’s nothing delicious about mushy zucchini, is there?).

      When I make this dish, the zucchini I use are typically done at right around 7 minutes. The cooking time can vary a bit depending on the air fryer used or the thickness and size of the zucchini pieces used.

      When they’re done, the zucchini should be tender to the bite, slightly al dente and definitely NOT mushy! The panko crumb topping should also be a light golden brown in color.

      When done cooking, the air fryer zucchini bites for two are crispy and golden.

      Serve And Enjoy!

      My husband and I enjoyed the air fryer zucchini bites served with creamy crockpot pork chops and mashed potatoes (with gravy from the pork chops!). It was a nice, “comfort food” style meal and we enjoyed every single bite!

      The air fryer zucchini bites have a little bit of a crunch from the panko crumb topping, they’re seasoned well, and they are not “mushy” or overcooked, which is awesome.

      Ingredients
      • 2 small/med. zucchini about ¾ pound in total
      • ¾ Tablespoon extra virgin olive oil
      • Tablespoons Parmesan cheese (finely grated)
      • 1 Tablespoon panko bread crumbs
      • 2 teaspoons all-purpose flour
      • ¼ teaspoon kosher salt
      • teaspoon garlic powder
      • teaspoon onion powder
      • teaspoon ground black pepper
      • tiny pinch of red pepper flakes (if desired) OPTIONAL
      Instructions
      1. Measure panko breadcrumbs, Parmesan cheese, flour, salt, pepper, onion powder, garlic powder and a tiny pinch of red pepper flakes into a small bowl. Stir until combined.

      2. Slice each zucchini in half lengthwise, then slice each piece in half (lengthwise) again. You should end up with 4 long zucchini quarters for each zucchini. Lay the zucchini slices cut side down; slice each piece into ¾" pieces.

      3. Drizzle olive oil over zucchini pieces; gently toss until all pieces have olive oil on them. Pour the seasoned panko breadcrumbs over the oil-covered zucchini. Gently toss until all zucchini bites are lightly covered with the panko mixture.

      4. Preheat air fryer for 5 minutes at 400°F. Once preheated, place zucchini bites in the basket in a single layer for best heat/air circulation. NOTE: If doubling or tripling recipe, cook zucchini in batches (keep previous batches warm in oven).

      5. Cook zucchini at 400°F. for 7-9 minutes. Shake or flip zucchini a couple times during cooking time for even cooking. Keep an eye on the zucchini. Check it at the 6-minute mark for tenderness, to ensure they don't overcook. Cooking time can vary slightly, depending on the thickness/size of zucchini used.

      6. When done, zucchini bites should be golden brown, tender, slightly al dente and NOT mushy! Remove from the air fryer basket and serve immediately while hot. Enjoy!

      Air Fryer Ratatouille

      Today I want to share a recipe with you for air fryer ratatouille. If you’re unfamiliar with this dish, it is a roasted vegetable dish that originated in France in the 18th century as a “peasant dish”. 

      The “lower class” farmers and peasants of the time could make this dish easily using their home-grown garden produce to make a filling and hearty vegetable “stew”.

      In modern times, it has acquired a wonderful reputation around the world as a delicious, colorful roasted vegetable side dish or main dish.

      During the heat of summer when I don’t want to turn on our oven (and heat up our kitchen), it’s so convenient to use my air fryer for cooking. Here’s how to make this yummy ratatouille using an air fryer.

      Prep the Vegetables

      The vegetables you will need for this ratatouille recipe are eggplant, green zucchini, yellow squash, onions, garlic and tomatoes. I am so fortunate to grown all of them in our little raised bed garden, so I could use them for this recipe!

      The eggplant I used was medium-sized (about 6″ long), and I used two small green zucchini, two small yellow squash and two medium tomatoes when I photographed this (all from our garden!).

      You can substitute 1 medium-sized zucchini and/or yellow squash, or a very large tomato if that’s what you have and end up with about the same amount!

      Eggplant, zucchini, yellow squash, onions, garlic and tomatoes are used to make ratatouille.

      Trim the ends off the vegetables, then slice each of them into rounds that are approximately ¼” thick. Set the sliced vegetables aside until you are ready to assemble the ratatouille in the pan.

      The veggies are sliced into ¼" thick rounds before layering them in a pan.

      Prepare The Spice Mixture for the Veggies

      Place olive oil, salt, pepper, dried oregano and dried basil in a small bowl, then stir until these ingredients are fully combined. 

      Spice mixture is made with olive oil, salt, pepper, oregano and basil.

      Place all of the sliced veggies into a separate, large mixing bowl. Pour the oil and spice mixture over all the sliced veggies. 

      The oil and spices are added to the bowl of sliced veggies.

      GENTLY toss the veggies in the oil and spices until they have been well-covered with the seasoning mixture. The vegetables, especially the tomatoes, are pretty “delicate”, so go easy on them! Set the bowl aside.

      Vegetables for the ratatouille are gently tossed with oil and spices until coated.

      Layer The Vegetables In The Prepared Casserole Dish

      The casserole dish you use must be oven-proof and fit easily in the basket of your air fryer. Spray the bottom and sides with non-stick baking spray.

      In a small bowl, stir together diced onion and minced garlic, then spread this mixture on the bottom of the baking dish. This is the first layer, and it will provide lots of flavor, so don’t forget this one!

      Arrange the sliced vegetables in the pan (placing them directly on TOP of the onions and garlic. Stand the veggie slices on end, overlapping and alternating the veggies (and colors). Start around the edges of the pan and work into the center to create a colorful looking, layered ratatouille.

      If you have more sliced veggies than it looks like you need to fill the pan, simply wedge them in the pan as best as possible in every nook and cranny you can find! for best results, try to keep the veggies in a single layer.

      Cook The Air Fryer Ratatouille

      Preheat your air fryer to 400°F. (200°C.). When it’s pre-heated, place the pan into the basket of the air fryer. Cook the ratatouille at 400°F. for 15-20 minutes until fully roasted.

      IMPORTANT TIP: I absolutely recommend checking on the veggies around the 10–12-minute mark to ensure the veggies don’t overcook. The thickness of the vegetable slices you’re using and varying temperatures of different air fryers can all lead to differing results, so please keep an eye on the vegetables!

      When the air fryer ratatouille is done, the vegetable slices should be well-browned and tender. Once done, pull the basket out of the air fryer.

      Add Parmesan Cheese

      Garnish the top of the ratatouille immediately with finely grated fresh Parmesan cheese (while the veggies are really hot). Put the ratatouille back in the air fryer and close it but DO NOT COOK IT ANYMORE.

      The residual heat remaining in the air fryer allows the shredded Parmesan cheese to melt slightly on top of the hot vegetables, which adds another layer of flavor to this dish.

      Finely grated Parmesan cheese is sprinkled on top of the air fryer ratatouille.

      As soon as the Parmesan has melted, the air fryer ratatouille is ready to be served and enjoyed. The roasted vegetables look beautiful and are a wonderful addition to many main dishes.

      Once the parmesan cheese melts, the air fryer ratatouille is ready to be served.

        If you’re looking for a new way to cook fresh vegetables in your Air Fryer, I hope you find this recipe I’m sharing today helpful! Most of the time I roast large baking sheets of fresh vegetables in our oven, but sometimes it’s too hot to heat up the kitchen.

        Our air fryer comes “to the rescue” when it’s really hot outside or I’m only cooking veggies (a much smaller amount) for my husband and myself. That’s when an air fryer comes in handy! You can “roast” veggies in the air fryer and don’t have to heat up the whole house doing it.

        This recipe I am sharing today is a really simple one that yields two nice-sized servings. All you will do is cut up fresh veggies, toss them with olive oil and spices, then cook them in your air fryer until they’re tender and slightly browned. They will look like they just came out of the oven!

        Serve the vegetables hot, right out of the air fryer, sprinkled with grated Parmesan cheese and serve this delicious side dish! Here’s how to make it.

        Prepare The Vegetables

        For this recipe I use cauliflower, broccoli, carrot, red and orange bell pepper and red onion. Chop or slice all of the vegetables into bite-sized pieces and place them in a medium bowl.

        Raw veggies cut into bite-sized pieces are combined in a bowl.

        You will use olive oil, Italian seasoning, sea salt, garlic powder, black pepper and onion powder to season the chopped veggies.

        Spices and olive oil that will be used to season the vegetables.

        Drizzle olive oil over all of the chopped vegetables in the mixing bowl. Use tongs or two large spoons to gently toss the veggies until they are lightly covered with the oil.

        Chopped raw veggies are drizzled with olive oil before adding spices.

        Season The Vegetables

        When the vegetables have been combined with the olive oil, they are ready for the dry spices because the oil will allow them to adhere. Add the spices to the veggies.

        Salt, pepper, garlic powder, onion powder and Italian seasoning is added to veggies.

        Use the tongs or two spoon to gently toss the veggies again, in order to distribute the spices evenly. Once they’re coated with the olive oil and spices, the veggies are ready to be cooked in the air fryer.

        Oil and spice covered veggies are now ready for the air fryer.

        Time For The Air Fryer

        Preheat your air fryer to 370°F. for 4 minutes. When it’s done preheating, spread the seasoned veggies out in the air fryer basket in a single layer. A single layer allows for better air and heat distribution.

        NOTE: If you are planning to double or triple this recipe to feed more people, it is important to not overcrowd the air fryer basket. You may have to cook the veggies in batches, because you want the veggies air frying in a single layer for best results!

        Seasoned veggies are spread in a single layer in the air fryer basket for cooking.

        Cook the air fryer veggies for two at 370°F. for about 4 minutes, then open the air fryer and flip the vegetables to the other side. I use a metal spatula to do this because I can get more veggies on it.

        Once you have flipped the veggies to the other side, be sure to re-spread them out in a single layer again. Continue heating for an additional 3-5 minutes until they are tender and lightly browned.

        Air Fryers can vary quite a bit in temperatures, so I recommend pausing it every minute or so after you flip them over, to ensure you do not “overcook” them. You want the veggies to be fork-tender and only lightly browned, NOT charred, overly crispy and dried out!

        When done, air fryer veggies for two are lightly browned and fork-tender.

        Serve The Air Fryer Veggies For Two

        When the vegetables are done air frying, remove them from the basket and into a serving bowl. Immediately sprinkle fresh grated Parmesan cheese on top of the vegetables.

        If desired, you can also add chopped fresh parsley (sometimes I do and sometimes I don’t!). Fresh chopped parsley adds additional flavor but simply leave it off and no one will ever know!

        Grated Parmesan cheese is added to the hot veggies before serving.

        We enjoyed these delicious air-fried veggies serve along with Garlic Butter Red Potatoes and Instant Pot Boneless Pork Chops.

        It’s so convenient having an air fryer and an Instant Pot, especially since both of these kitchen appliances were given to me as gifts. I love being able to utilize them for meals, especially on HOT summer days!

        It was almost 100°F. outside the day I made these dishes, but thankfully by using our air fryer and Instant Pot, our kitchen stayed nice and cool. Hooray!

        It’s quick and easy to make delicious, well-seasoned Air Fryer Salad Croutons to add crunch and flavor to a favorite mixed green salad.

        Today I want to share a very simple way to make croutons for green salads in the comfort of home using an air fryer! I’ve baked homemade croutons for years, but when it is hot outside, I use my air fryer instead of our oven, because it helps our kitchen stay cooler!

        Once you’ve cut up about 4 pieces of stale French or Sourdough bread, you’re ready to go! Now you’ll add a buttery seasoning mix to the bread cubes and cook them! It is so easy and pretty quick to make salad croutons using an air fryer!

        When the croutons are done cooking, they’re golden brown, crispy, delicious and ready to use on top of mixed green salads! Here’s how to make air fryer salad croutons!

        Make A Seasoning Mix For The Salad Croutons

        You will need butter, dried parsley flakes, grated Parmesan cheese, garlic powder and seasoning salt to make the seasoning for the croutons.

        Melt butter in a small saucepan on low heat and add the spices to the pan once the butter has melted. Stir until the spices are fully incorporated. Remove the saucepan from the heat and set it aside to cool slightly.

        Spices and Parmesan are added to melted butter in saucepan.Buttery seasoning mix will be used to season the salad croutons.

        Season The Croutons

        Cut four 1″ slices of stale French or sourdough bread into bite-sized cubes. The bread cubes shown below are cut from a loaf of Cheddar Chive No-Knead Bread I made (recipe coming soon).

        Stale bread is the best choice instead of fresh, because the bread cubes don’t get soggy once the melted butter and spices are added. Place the bread cubes in a large bowl.

        Sourdough or French bread is cut into cubes and placed in a bowl.

        Pour the melted butter and spice mixture over the bread cubes in the bowl. Toss the croutons gently to allow the seasoning mix to coat all of the bread cubes.

        The seasoning mix is poured over bread cubes and tossed well to combine.

        Cook The Air Fryer Salad Croutons

        Preheat your air fryer according to the manufacturer’s instructions. Once the croutons are well-coated with the seasoning mix, place them in the inner air fryer basket in a single layer.

        Cook the croutons at 300°F. for 4 minutes, then remove the basket from the air fryer. Gently toss or turn the croutons to the other side (as quickly as possible).

        Lay them back in the basket in a single layer. Continue to cook the croutons 4-5 more minutes OR until they’re golden brown and crispy. Keep an eye on them because you don’t want them to burn.

        NOTE: I use a Cosori air fryer, and the croutons typically take about 8 minutes total to be done. Your time may vary slightly (less time or more), depending on crouton size and your air fryer.

        Use The Air Fryer Salad Croutons

        When the croutons are done, browned and crispy, remove them from the air fryer. Transfer the croutons onto paper towels to allow them to cool.

        Here’s a close-up photo of these delicious croutons! Once they’re cooled to room temperature, they are ready to serve on top of a yummy mixed green salad.

        Ingredients
        • 4 1" slices sourdough or French bread, slightly stale or other white bread
        • 3 Tablespoons butter melted
        • 1 teaspoon grated Parmesan cheese* *Kraft shaker can is best for croutons
        • 1 teaspoon dried parsley flakes
        • ½ teaspoon garlic powder
        • ½ teaspoon seasoning salt
        Instructions
        1. Melt butter in a small pan on low heat, then add the spices. Stir until the spices are fully incorporated. Remove pan from the heat; set it aside to cool slightly.

        2. Cut four 1" slices of stale French or sourdough bread into bite-sized cubes (about 2 cups total). Place bread cubes in a large bowl. TIP: Stale bread is the best choice, because it doesn't get soggy once butter and spices are added.

        3. Pour butter and spice mixture over the bread cubes. Toss the croutons gently to allow seasoning mixture to coat the bread cubes.

        4. Preheat air fryer according to manufacturer's instructions. Once preheated, place seasoned croutons in the inner air fryer basket in a single layer.

        5. Cook croutons at 300°F. for 4 minutes, then remove basket from the air fryer. Gently toss or turn croutons to the other side (as quickly as possible). Spread them back in the basket in a single layer. Continue cooking croutons 3-4 more minutes OR until they're golden brown and crispy. NOTE: Your cooking time may vary slightly (less or more time), depending on crouton size and your air fryer.

        6. When croutons are done, transfer them onto paper towels to cool. When cooled, use them on green salads. Enjoy!

        If you have an air fryer and enjoy “fried” mozzarella and sauce that is popular on restaurant menus, then check out the recipe today to see how to make them at home (for a fraction of the price)!

        There’s not too much prep involved, and these delicious appetizers or snacks can even be frozen for a later date, which makes them convenient to have around! I love to make them in my air fryer instead of frying them in a skillet full of hot oil.

        Air-Fried Mozzarella Bites come out crispy and golden on the outside, with warm, gooey melted cheese inside. They’re a favorite party food or game day appetizer to serve your family and friends. Here’s how to make them.

        Prepare The Mozzarella Cheese And Dipping Station

        Open 6 individual packages of mozzarella string cheese, discarding the wrappers. Cut each piece in half in the middle so you end up with 12 string cheese halves.

        Set out 3 separate “cereal-sized” bowls for the seasoning and dipping “station”. It works well to place them next to each other on the kitchen counter, so the dipping process is easier to manage.

        FIRST BOWL: Place ½ cup of all-purpose flour and 1 teaspoon of salt in the bowl and stir together until combined.

        SECOND BOWL: Place 2 large eggs and beat them well with a whisk or fork until fully combined.

        THIRD BOWL: Place 1 cup of Italian seasoned breadcrumbs and 1 teaspoon of salt. Stir until fully combined.

        Pat the mozzarella half-sticks well using paper towels, so they are fully dry, then put them right in front of the seasoning bowls. Now it’s time to get the mozzarella bites ready!

        Time To Coat The Mozzarella Bites

        The best way I’ve found to coat the mozzarella bites is to do ONE AT A TIME! Place the mozzarella in the flour and turn it until it is covered on all sides.

        A stick of mozzarella string cheese is rolled in a flour mixture until coated.

        Put the flour-covered cheese in the egg mixture and use a fork (it’s messy!) to turn it until all sides are covered with egg. Lift the cheese up to let any excess egg drip back down into the bowl.

        Lay the floured, egg-coated piece of cheese into the seasoned breadcrumbs and roll it in this mixture until it is well-coated on all sides.

        IMPORTANT: Now repeat this process again on the same piece of cheese! Dip it back in the flour, back in the egg, then give it a final roll in the breadcrumbs!

        Each piece of mozzarella needs to be processed this way (2 times for each piece of mozzarella!). As you finish each one, place it on a parchment paper-lined baking sheet, then go to the next piece.

        Ready To Freeze

        When you’re done, you should have 12 mozzarella bites that have each been “covered” two times. Lay them with a space in between each one (in a single layer) on the parchment paper-lined baking sheet and place them in the freezer for 2 hours. This will “flash-freeze them. Don’t skip this step!

        This freezing time is very important so the air-fried mozzarella bites will be solid and hold together once they are in the hot air fryer! This recipe will yield 12 air-fried mozzarella bites. When they’ve been flash-frozen for two hours they can be removed and air-fried immediately.

        Breaded, seasoned mozzarella sticks are flash frozen on baking sheet for 2 hours.

        Can They Be Made Ahead?

        YES! You can pre-make the mozzarella bites, flash-freeze them for two hours and keep them in the freezer for several weeks or until you want to cook all or a few of them).

        If you will be doing this, transfer the frozen mozzarella sticks off the baking sheet and store them in a freezer-safe resealable bag or container.

        The flash-frozen mozzarella bites can be stored for weeks in a freezer before cooking.

        Time To Cook The Air-Fried Mozzarella Bites

        Preheat your air fryer to 400°F. Spritz the mozzarella sticks lightly (on top) with cooking spray, olive oil or vegetable oil. Lay the frozen (do not thaw) mozzarella sticks in a single layer, spritzed side UP in the basket.

        Cook them for 3 minutes, then open the air fryer and gently turn the cheese bites over to the other side. Lightly spritz the other side with oil or cooking spray, then continue cooking for about 3 more minutes (approx. 6 minutes total time).

        When done, the air-fried mozzarella bites should be heated all the way through and should be crispy and golden in color on the outside. Some of the melted cheese could also be present on the surface as it oozes out very slightly while cooking.

        Serve And Enjoy!

        Transfer the HOT mozzarella bites to a serving plate with a small dish of warm marinara sauce on the side, for dipping! TIP: Let the mozzarella bites cool very slightly before digging in because the cheese inside is very hot when they first come out of the air fryer!

        It is fun taking that first bite because the string cheese is gooey, melted, and has a good long “pull” of warm, stringy cheese! YUM!

        Lots of melted cheese inside each bite and dipping each air-fried crispy bite in marinara sauce adds to the overall great taste! YUM!

        • 6 1 oz. sticks mozzarella string cheese (part-skim) cut in half across width
        • ½ cup all-purpose flour
        • 2 teaspoons salt (DIVIDED USE)
        • 2 large eggs beaten/whisked until combined
        • 1 cup Italian seasoned breadcrumbs
        Dipping Sauce: Marinara Sauce (approx. ½ cup)
          Instructions
          1. Cut each piece of string cheese in half widthwise. Pat pieces dry with paper towel.

          2. Set out 3 small bowls side by side with the following ingredients. FIRST BOWL: Place flour and 1 tsp. of salt in bowl; stir together until combined. SECOND BOWL: Add eggs; beat with a whisk or fork until combined. THIRD BOWL: Stir seasoned breadcrumbs and 1 tsp. of salt together until combined.

          3. Place one cheese piece in flour mixture; turn until covered on all sides. Put flour-covered cheese in the egg mixture; use a fork to turn it until all sides are covered with egg. Let excess egg drip back down into the bowl. Lay floured, egg-coated cheese in the breadcrumbs; roll until well-coated on all sides. IMPORTANT: Repeat this process again on the same piece of coated cheese! Dip it back in the flour, back in the egg, then give it a final roll in the breadcrumbs! **Finish all remaining cheese pieces the same way (coating each piece 2 times)

          4. Lay each piece with a space in between each one (in a single layer) on a parchment paper-lined baking sheet. You should have 12 mozzarella bites that have each been "covered" two times. Place them in the freezer for 2 hours. This will "flash-freeze them. Don't skip this step!

          5. To Cook: Preheat air fryer to 400°F. Spritz each piece lightly (on top) with cooking spray, olive oil or vegetable oil.           Chicken breasts are well seasoned, then cooked in an air fryer for about 10 minutes. After that they are sliced into strips which can be eaten as is, or added to soups, salads, casseroles, taco shells, quesadillas, burritos, pasta, etc.

          How’s that for versatile? This recipe comes together so fast, it is a perfect choice for a crazy busy day… and the chicken tastes so good! Here’s how to make air fryer chicken breast strips. I think you’re going to love them!

          What Ingredients Will I Need?

          When making this dish, you will need 1¼ pounds of boneless and skinless chicken breasts (about 3), olive oil, and seasoning mix. To make the seasoning mix you need paprika, garlic powder, onion powder, smoked paprika, salt, brown sugar and cornstarch.

          Mix the spices in a small bowl until they’re fully combined. It takes about a minute to whip this spice mix together. That’s it. So easy, right?

          A variety of 7 spices are used to make the seasoning mix.Once fully combined, the seasoning mix is ready to apply to the chicken.

          Prepare And Season The Chicken

          Pat the chicken breasts dry using paper towels, then slice each chicken breast into 3 pieces. Place each piece (one at a time) between layers of plastic wrap, and pound them thin, using a meat mallet.

          Season the chicken (on one side) with HALF of the seasoning mix, then drizzle with HALF of the olive oil. Rub the oil and spices together to cover the chicken.

          Turn the chicken pieces to the other side and repeat the process with the seasoning and olive oil. Now both sides of the chicken should be well-coated with spices and oil.

          Chicken is well seasoned and ready for the air fryer.

          Cook Chicken Breasts In The Air Fryer

          Preheat the air fryer to 400°F. Lay the seasoned chicken pieces (in a single layer) in the basket of the air fryer. Try not to crowd them, so the hot air circulates better.

          Cook the chicken at 400°F. for 5 minutes, then pause the cooking, and carefully turn the pieces over to the other side.

          Put the basket back into the air fryer and continue cooking the other side of the chicken for an additional 3-5 minutes.

          Keep an eye on the internal temperature using a digital thermometer. When done, the chicken should register an internal temperature of 165°F.

          If you’re looking for a delicious air fryer recipe using chicken, may I suggest this one for garlic herb chicken thighs? It is a simple recipe to prepare with very minimal prep and the chicken comes out fantastic every time I’ve made it.

          You will use 4 large bone in, skin on chicken thighs. They are coated with a seasoning marinade for 30 minutes before cooking. Pop them in the air fryer and cook for 20 minutes, and the result is a delicious, flavorful main dish!

          It’s such a simple recipe, and it’s so good. Here’s how to make garlic herb chicken thighs in an air fryer.

          Prepare The Chicken Thighs

          Pat the chicken thighs dry using paper towels. The skin is left on for this recipe, because it adds to the crispiness of the finished garlic herb chicken thighs.

          Once patted dry, place the chicken thighs in a large bowl, and set it aside while you prepare a simple seasoning mix.

          Make The Seasoning Mix

          The spice mix is a cinch to make! Simply mix garlic powder, onion powder, salt, black pepper, dried thyme, rosemary and tarragon in a small bowl until they’re combined.

          That’s it… see how easy that was? You will use ALL of this mixture for the four chicken thighs.

          Dry spices are combined in bowl for the chicken marinade.Garlic powder, salt, pepper, thyme, rosemary and tarragon are mixed.

          Drizzle olive oil over the chicken thighs, then add the seasoning mix on top. Use your hands to rub and coat the chicken with oil and the spices.

          Continue until all the chicken thighs are coated on all sides with oil and spices. Rub the mixture into the surface of the chicken so it adheres.

          Let the spice/oil-coated chicken marinate for 30 minutes. This allows the spices (and oil, for crispiness) to help give flavor to the chicken skin and meat, before they are cooked.

          Now It’s Time For The Air Fryer!

          Preheat the air fryer to 380°F. NOTE: My air fryer preheats at a default temp. of 400°F, so I preheat it at this temperature, then adjust it down to cook the chicken thighs.

          Once the air fryer has preheated, adjust the temperature to 380°F. Place the marinated chicken thighs in the inner basket, leaving a small amount of space between each one.

          TIP: If you are cooking more than 4 thighs, be sure to not overcrowd the basket, to ensure each piece of chicken cooks evenly and becomes crisp on the outside.

          Select the CHICKEN button if your air fryer has that feature. If not, set the timer for 20 minutes (at 380°F.) . Press START, and air fry the chicken for 10 minutes.

          After 10 minutes, press PAUSE, and flip the chicken thighs over to the other side. They should already be nicely browned at this point.

          Continue cooking the other side for the remaining 10 minutes OR until the garlic herb chicken thighs reach a “safe” internal temperature of 165°F.

          Serve The Garlic Herb Chicken Thighs

          The garlic herb chicken thighs should be fully cooked at this point and can now be served. We let them rest for 1-2 minutes to let the internal juices redistribute through the meat before serving.

          The chicken thighs taste great, thanks to the marinade! They also are juicy on the inside and crispy on the outside. Serve with your favorite sides, and enjoy this simple meat dish!

          Ingredients
          • 4 large chicken thighs (bone in, skin on)
          • Tablespoons olive oil
          For Spice Mix:
          • Tablespoons garlic powder
          • ¾ teaspoon salt
          • ¼ teaspoon black pepper
          • ¼ teaspoon onion powder
          • ¼ teaspoon dried thyme
          • ¼ teaspoon dried rosemary
          • ¼ teaspoon dried tarragon
          Instructions
          1. Pat chicken thighs dry using paper towels. Place chicken in a large bowl; set aside.

          2. In a separate small bowl, combine garlic powder, salt, black pepper, thyme, rosemary and tarragon.

          3. Drizzle olive oil over the chicken, then add spice mix. Use your hands to rub and coat chicken with oil and spices until they adhere. Continue until chicken is coated on all sides with oil/spices. Let chicken marinate for 30 minutes.

          4. Preheat air fryer according to manufacturer directions. Once preheated, adjust temperature to 380°F. Place chicken thighs in the inner basket, leaving space between each one. TIP: If cooking more than 4 thighs, don't overcrowd the basket, to ensure each piece cooks evenly and becomes crisp on the outside.

          5. Select the CHICKEN button if the air fryer has that feature. If not, set the timer for 20 minutes (at 380°F). Press START; cook chicken for 10 minutes.           Do you enjoy biscuits? We sure do, and the recipe I am sharing today is a fantastic one for making them in an air fryer! I found the original recipe in a manual that came with my air fryer, and only made a couple small changes.

          Let me tell you, these air fryer cheddar biscuits (with diced jalapeños) are SO GOOD! They are big enough biscuits that sometimes my hubby and I split one, and every bite is full of deliciousness.

          The prep is fairly minimal, but the results are amazing! If you have an air fryer, I hope you will try this biscuit recipe. Here’s how to make them.

          Make The Dough For The Cheddar Biscuits

          Sift all purpose flour, baking powder, sugar, salt and baking soda together into a large mixing bowl. Cut VERY COLD butter into small chunks and add them to the sifted dry ingredients.

          Use a pastry blender or two forks to cut the butter into the flour mixture. Continue until the dough becomes crumbly, and the butter has been reduced to the size of peas.

          Add grated cheddar cheese and finely diced jalapenos to the dry ingredients and stir, to combine. Once combined, pour in the buttermilk, and stir until it has been incorporated into the mixture.

          NOTE: The jalapeno flavor is very mild in this recipe (as written). Don’t like jalapeños? Leave them out! Do you LOVE jalapeños? Add more, if desired, to suit your taste.

          Grated cheddar cheese and diced jalapeños are added to dough mixture.Cold buttermilk is added to the cheddar biscuit dough and stirred to combine.

          Continue to stir until all the dough ingredients have been fully combined in a shaggy mound of dough.

          Shape, Slice, And Top With Melted Butter

          Cut a piece of parchment paper to fit the basket of your air fryer. Place the dough in a mound in the middle of the paper.

          Shape the dough into a square, about 1″ thick, using your hands (a bit sticky). Slice the dough into 4 equal-sized squares using a knife or pizza cutter (my favorite way to cut them).

          Separate them a bit on the parchment paper, and then brush the tops of each biscuit with melted butter. Now they’re ready for the air fryer.

          Time For the Air Fryer!

          Preheat your air fryer to 350°F. Once it has reached temperature, carefully place the parchment paper and biscuits into the basket. Cook the biscuits at 350°F for 12 minutes without disturbing them.

          When done, the air fryer cheddar biscuits should be nicely browned on top and cooked all the way through. Transfer the parchment paper (and biscuits) to a wire rack to cool for 1 minute before serving.

          Slice through the biscuits to separate them from each other, because they may have cooked together as they rose and cooked in the pan.

          Time To Enjoy The Air Fryer Cheddar Biscuits

          Serve the air fryer cheddar biscuits while they’re warm and enjoy! My husband and I split them in half at times, because they are a large biscuit, and are a bit calorically “challenging”!

          The biscuits are buttery and slightly crunchy on the outside, but the inside is soft and fluffy! These delicious biscuits taste outstanding, as well, and the jalapeños only add a tiny amount of heat.
